I like to think that every note I send is a love note. I always sign them, Love, ma. I don’t think you can ever say I love you often enough. We never know when we will be seeing that person again. I’m pretty sure all my loved ones know that I love them. I tell them that every day.
Life is just too short to hold any grudges or anger. Always tell those you love, just how much you care. Don’t wait for Valentines Day to say I love you.
One of the best ways I’ve shown my family love is by cooking for them. Now they are no longer home, I just cook for me, but still I try to put some love into it by sharing the recipes. It’s Monday and my day to cook up something new and on the menu is:
Turkey Biscuit Skillet
Makes 6 servings
1 Tbsp. butter
1/3 cup chopped onion
1/4 cup flour
1 can, 10.5 oz. condensed chicken broth, undiluted
1/4 cup milk
1/8 tsp pepper
2 cups cooked turkey breast
2 cups frozen peas and carrots, thawed
1 tube refrigerator biscuits, quartered.
Preheat oven to 400 degrees. Melt butter in a cast iron skillet, over medium high heat. Add onion and stir until tender.
In a small bowl, mix flour, broth, milk, and pepper until smooth, stir into pan. Bring to a boil stirring constantly; cook and stir until thickened. Add the turkey and frozen vegetables, heat through. Arrange biscuits over stew. Bake until biscuits are golden brown. about 20 minutes.
The only thing I’ll be doing different with this recipe is to use chicken instead of the turkey. Either one will work just fine.
We’re still in the lower 60’s today and it will be cloudy with rain. So it will be a good day to stay inside and get some housework done and turn on the oven too.
My thoughts and prayers are for all those in harm’s way from the hurricanes.

Whenever I open my grandmother's little wooden box and spy the ancient, crumbling cards bearing terms of endearment I get a little wistful. True love never goes out of style, but in today's electronic, hurry-up world that often gets pushed aside. Forgotten.
