There is no doubt that I love donuts and that includes the cream filled ones, So I’ll definitely celebrate today. I’ll make sure to pick some up when I go for groceries.
Today is the day I make my list and also the menu for next week which is what I do my shopping from.
On the menu for next week is:
Monday - Spicy Touchdown Chili
Wednesday - Braised Herb Pork Chops
Friday - Mushroom Ravioli
Weekend - Suausage Stuffed Acorn Squash
On the menu for today is:
Taco Sweet Potato Shepherd’s Pie
Makes 6 servings
1 lb sweet potties peeled and diced.
1/4 cup milk
1 cup shredded sharp Cheddar cheese
1 Tbsp. chopped fresh cilantro
1 tsp grated lime zest
3/4 tsp. salt divided
1/4 tsp ground pepper
1 Tbsp. olive oil
1 cup chopped onion
1 Tbsp, minced jalapeno pepper, optional
8 oz, lean ground beef
2 tsp chili powder
2 tsp. ground cumin
1 tsp.ground coriander
1 tsp. dried oregano
3/4 cup beef broth
1 cup corn kernels
1 15 oz. can black beans, rinsed and drained
1 green bell pepper, chopped
1 Tbsp.fresh lime juice
Cook sweet potatoes in a pan of boiling water until tender, Drain, then return to the pot. Cook over medium low heat until excess moisture is evaporated. Remove from heat. Add milk and mash until smooth. Stir in Cheddar, cilantro, lime zest, 1/4 tsp salt and pepper. Set aside
Heat oil in a 10 inch cast iron skillet over medium heat. Add onion, garlic and jalapeño and cook until softened.
Add beef and cook, breaking up with a wooden spoon, until browned, Stir in tomato paste , chili powder, cumin, coriander, and oregano. Cook about one minute more. Stir in broth scraping up any browned bits. Stir in corn, black beans, bell pepper, and remaining 1/2 tsp salt. Cook until the liquid has nearly evaporated. Sir in lime juice.
Preheat broiler to high with rack set 6 inches from element.
Evenly spread the mashed sweet potatoes over the beef mixture. Broil until just starting to turn brown. Let the pie rest for 5 minutes before serving.
Today we’re to be in the low 70’s and sunny so it will be a great day to get out and do shopping, Tomorrow we’ll be warmer and in the 80’s.

Those are my very favorite donuts!
Unfortunately, I can't eat just one. (Maybe, I won't. lol)
I'm looking forward to reading your spicy touchdown chili recipe! In fact, I made up a batch of chili yesterday. Normally I'd wait until the weather cools, but our church is having a chili cook-off Sunday after services so I wanted to rehearse!
