I do love cherries on ice cream so will be celebrating today. I like to use cherry pie filling because it is so tasty. But I don’t think I’ll be lighting up my dessert as I have no brandy to add to it. Still it should be very good.
It’s the day here at my house that I cook for the weekend, so that I can take it easy tomorrow and not have to cook.
On the menu for this weekend is:
Sausage Stuffed Acorn Squash
makes 4 servings
2 acorn squash
1 lb bulk spicy pork sausage
1/2 cup chopped onion
1 cup fresh spinach, finely chopped
1 cup dried cranberries
1 1/2 cup soft bread crumbs
1 egg
1 Tbsp milk
Halve squash lengthwise, discard seeds. Place squash in a microwavable dish, cut side down. Microwave on high until tender, about 12 minutes.
Meanwhile in a skillet, cook and crumble sausage with onion over medium heat until no longer pink, drain. Remove from heat , stir in spinach, cranberries and bread crumbs. In a small bowl, whisk together egg and milk. Add to sausage mixture and toss until moistened.
Turn over squash, fill with sausage mixture. Microwave, covered until a thermometer inserted in stuffing reads 165 degrees. About 3 minutes more,
I’m only using 1 squash since this will make one half for today and one half tomorrow. That is plenty for me and I will not be adding spinach to mine. It will be delicious as it is. I love the flavors of the squash and sausage together !
It’s to be another cold day here, maybe a little warmer in the mid 60’s but we are to have sunshine. So I’m once again staying at home today. Comfortable and cozy.
These chilly days have caused me to turn on the heat here. Thank goodness I have whole house heating so I’m not cold at all but staying warm. It’s unusual to have the heat on already, but our weather is colder than usual for us this time of year. We are usually still in the 70’s, but it looks like we’ll be having another cold week ahead and tomorrow through Wednesday we’re to have rain .

Uh-oh, I think Blogger's spam ate my earlier comment.
I'm just so taken with this recipe I added the ingredients to my shopping list. I'll probably do a rehearsal before Thanksgiving, sans the cranberries.

I won't be making cherries jubilee today, but I wouldn't mind a piece of cherry pie. It's one of my favorite pies. Hope you're having a great Saturday.
I am not sure I have ever had cherries jubilee but I do enjoy a cherry pie :) That sausage stuffed acorn squash looks interesting. Might have to make it down the line. It is "funny" to read about people having their heat on already when we still have our air conditioner running day and night. It won't be til November that we will have to run the heater.
