I’ve been counting my blessings for quite a few years now and they show what I’m thankful for. There is always something we can be thankful for every day. If nothing else I’m thankful that I woke up this morning and have another day to live and do my best. I would like to say, Thank You to everyone that lets me send out my message to them everyday. You are all so appreciated and loved.
This is my day, once again, to make up a menu for next week which is what I do my grocery shopping from. It’s also the day I do my grocery shopping.
Monday - Turkey Biscuit Skillet
Wednesday - Southwestern Casserole
Friday - Black Bean and Rice Enchiladas
Weekend - Slow Cooked Ham with Pineapple Sauce
I only cook every other day and eat the leftovers in between.
On today’s Menu is:
Braised Herb Pork Chops
Makes 7 servings.
1/4 cup dried parsley flakes
2 tsp paprika
1 tsp rubbed sage
1 tsp dried thyme
1 tsp ground mustard
1 tsp. pepper
1/2 tsp salt
1 tsp dried oregano
7 pork loin chops
2 Tbsp vegetable oil
2 cups thinly sliced onions
4 garlic cloves, sliced
5 carrots, cut into 2 inch pieces
2 cups chicken broth
Hot mashed potatoes, optional
Chopped fresh thyme, optional
Combine the first 8 ingredients, rub on both sides of pork chips. In a dutch oven, brown chops in oil for 2 to 3 minutes on each side. Remove and set aside. In the same pan saute onions and garlic for 2 minutes. Add carrots and broth. Bring to a boil and reduce heat.
Return chops to pan . Cover and bake at 325 degrees until meat and vegetables are tender, about 2 hours. If desired, thicken pan juices and serve with potatoes and sprinkle with fresh thyme.
This is supposed to be our last warm weather day so it will be nice to get out and about. Tomorrow it will be much cooler out. The first day of fall is going to feel like fall with a high of only 62 degrees. It must be time to put my flannel sheets on.

Be thankful for every day you get. It's a gift !
Interesting! My daily meditations journal even addressed gratitude this morning: "Praise and an attitude of gratitude are unbeatable stimulators. Gratitude for the good in our lives increases the good." How 'bout that!
