THOUGHT FOR TODAY

The little bear shown in my photos today is part of my fall decorations. He is the only bear I have left. Before I moved here I got rid of those I had left behind by children. I had all kinds of bears from Winnie the Poo to the Care bears. Some my children took back, but others I gave away.
I’d even made some Teddy bears of my own that I gave as gifts a long time ago. Not all of my grands have Teddy bears. Some don’t like them and prefer other things to take to bed with them. I know one of my grandsons has a fluffy dog he calls lovey and one of granddaughters prefers her baby blanket.
I had a lovely lunch out yesterday with my friends but for today, it’s my day to cook something new here and on the menu is:
Spinach and Artichoke Dip Pasta
Makes 4 servings
8 oz. rotini
1 5oz. package baby spinach roughly chopped
4 oz.cream cheese, cut into chunks
3/4 cup milk
1/2 cup grated Parmesan cheese, plus more for garnish
2 tsp. garlic powder
1/4 tsp ground pepper
1 14 oz. can artichoke hearts, rinsed, sqeezed dry and chopped
Bring a pan of water to boil. Cook pasta according to package directions. Drain.
Combine spinach and 1 tbsp water in a large sauce pan over medium heat, stirring until just wilted. Transfer to a small bowl,
Add cream cheese and milk to the pan, whisk until cream cheese is melted. Add Parmesan, garlic powder and pepper; cook, whisking until thickened and bubbling.
Drain as much liquid as possible from spinach. Stir into the sauce along with artichokes and pasta . Cook until warmed through .
I don’t have spinach on hand so will omit it from this recipe, but I’m sure it will still be good. You could also add some chicken if you wanted something more substantial to eat.
It’s to be a beautiful sunny day here in the low 80’s. But they say rain is coming in for Sunday.

I love my teddy bears, too! That's pretty neat you used to make them yourself. Perhaps my favorite is wee and worn ... dating back to my father's childhood (1914 or 15). I like to try and find the old ones at estate sales, too.
