THOUGHT FOR TODAY
Correction does much, but encouragement does more.

I like to think of my self as an encourager. A simple smile or a pat on the back can let someone know you care. I’m like a cheerleader and if you need some encouragement, just let me know and I’ll cheer you on!
I’ve encouraged all of my children in whatever they do. They know I’ll support them in whatever way I can. Not every day is a good one, but remember every day has some good in it when you look for it !
It’s Monday and my day to cook up something new and on the menu is:
Sheet Pan Sausage and Peppers
Makes 4 servings
1 red onion, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 orange bell pepper, sliced
1 Tbsp. olive oil
1/4 tsp black pepper
1/8 tsp. salt
1 12 oz pack smoked sausage
4 cloves garlic, crushed
2 Tbsp. Parmesan cheese
2 Tbsp. torn fresh basil
1/8 tsp crushed red pepper
Place a rimmed baking sheet in oven, preheat to 425 degrees. Toss together onion, bell peppers, oil, black pepper and salt in a large bowl.
Arrange vegetables in a single layer on preheated baking sheet. Bake in preheated oven until vegetables begin to soften.
Remove baking sheet from oven and toss vegetable mixture. Add sausage and garlic to baking sheet. Return to oven, and bake at 425 degrees until sausage is warmed through and vegetables are tender, about 15 minutes. Remove from oven and sprinkle with cheese and crushed red pepper.
I only have green peppers on hand so that is what will be in mine today. I’ll be serving this on a bun and making a sandwich out of it. I do love sausage sandwiches!
It’s also my Father’s birthday, may he rest in peace, and one of my niece and nephews anniversary so I’ll be remembering my Dad by lighting my birthday candle and am wishing my niece and nephew a happy anniversary !
Rain is forecast again today and it’s cooler too, so remember to make your own Sunshine !

Be an encourager : When you encourage others , you boost their self esteem, enhance their self confidence, make them work harder, lift their spirits and make them successful in their endeavors. Encouragement goes straight to the heart and is always available. Be an encourager. Always!

It takes just a little bit of encouragement to make a difference !
This world could sure use a lot more encouragers and less skeptics, ready to point fingers. Sometimes an 'atta-boy' could make an enormous difference in someone's day.
Your recipe sounds wonderful. We love sausage and brightly-colored peppers with lots of mustard, but I usually make them in the Instant Pot to avoid heating the kitchen.
