THOUGHT FOR TODAY
Do not make a stingy sandwich; pile the cold cuts high; so you should see the salmi coming through the rye.

I don’t have any salami on hand right now, but it’s my day to go shopping so I’ll be sure to pick some up so that I can celebrate today. I like salami, but usually get turkey or chicken lunch meat to have on hand.
I’m making up my shopping list and a new menu for next week which is what I do my shopping from.
Monday - Sheet Pan Sausage and Peppers
Wednesday - Taco Sweet Potato Shepherd’s Pie
Friday - Tomato Soup with Grill Cheese Croutons
Weekend - Classic Beef Stroganoff
On the menu for today is:
Cheesy Ground Beef and Broccoli Casserole
Makes 4 servings
1 lb. lean ground beef
1 yellow onion, finely chopped
4 cups chopped broccoli
3 Tbsp flour
1 Tbsp chopped fresh sage
2 cloves garlic, finely chopped
1 1/2 cups milk
4 oz. cream cheese
1 cup shredded Cheddar cheese
1/2 tsp. salt
1/8 tsp ground pepper
2/3 cup bread crumbs
1 Tbsp. olive oil
1/2 tsp paprika
Position rack in upper third of oven; preheat broiler. Cook ground beef and onion in a large oven proof skillet over medium heat, breaking the beef into bite size pieces with a wooden spoon, until beef is no longer pink.
Add broccoli: cook and stirring occasionally until the broccoli is tender. Add flour, sage and garlic; cook stirring constantly until beef and vegetables are well coated in flour mixture.
Add milk and bring to a simmer over medium high heat. Cook, stirring occasionally, until thickened. Stir in cream cheese and Cheddar until melted. Remove from heat and stir in salt and pepper.
Mix bread crumbs, oil and paprika in a small bowl. Sprinkle evenly over the mixture in the skillet .
Broil the casserole until the bread crumbs are golden brown and the edges are bubbling.
The only thing I’m leaving out of this recipe is the breadcrumbs. I prefer my casseroles without them. My iron skillet is my oven proof skillet and will go directly from the stove top to under the broiler.
We are to see some sunshine today so it will be a great day to get out and about ! I don’t have pictures of salami, but I do have more of my fall decorations for today.
I hope you all have a WONDERFUL Wednesday !
It’s not a charcuterie without the salami.

Salami is good and good for you too!
I wish I had some salami on hand right now! My favorite way to eat it is with a good hard cheese ... but there's lots of possibilities.
Broccoli is one of my most favorite veggies. I usually just saute it in the Instant Pot with butter, but I wish I could have a bite of your casserole (*grin*).
Odd the differences in our country. I never heard of Salami until I was grown. It was on Pizza that I first learned. I was at least 16 before I had Pizza. I was raised under a rock. LOL
Take care and be safe ;-)
I have never cared for Salami but I know a lot of people like it. Your recipe sounds really good. Like all your pretty fall decorations, it is still very hot here so fall seems far away to me.
