THOUGHT FOR TODAY
Festivals promote diversity, they bring neighbors into dialog, they increase creativity, they offer opportunities for civic pride, they improves our general psychological well being. In short, they make cities better places to live.

This grandson is called our Ray of Sunshine because he and his brother are my Sunshine Boys. I call his brother my Sunshine boy. They both light up my day with all their smiles. At this time they are gathered with their mom to lay their other grandmother to rest, so it’s not a happy time for them, but I’m sure they’ll be bringing some comfort to all.
Please join me in praying for the family at this time of deepest sorrow. May the dear Lord comfort them with his love.
This is my day to cook for the weekend, while it may not be a German recipe on the menu is:
Classic Beef Stroganoff
Makes 6 servings
1 1/4 lbs beef stew meat
2 tsp. vegetable oil
2 1/2 cups sliced mushrooms
1/2 cup sliced green onions or 1 onion, chopped
1 bay leaf
2 cloves garlic
1/2 tsp. dried oregano, crushed
1/4 tsp salt
1/4 tsp. dried thyme crushed
1/4 tsp black pepper
1 1/2 cup beef broth
1/4 cup dry cooking sherry
1 8oz.carton sour cream
1/3 cup flour
1/4 cup water
Sautéed zucchini noodles or hot cooked whole wheat pasta
1 sprig snipped fresh parsley or basil
Cut up any large pieces of meat. In a large nonstick skillet cook half the meat over medium high heat until brown. Using a slotted spoon remove meat from skillet and repeat with remaining meat. Set a side
In a slow cooker, combine mushrooms, onions, bay leaf, oregano, salt, thyme and pepper. Add meat. Poor sherry and broth over the mixture in the cooker.
Cover and cook on low for 8 to 10 hours. Remove and discard bay leaf.
If using low heat setting, turn to high setting. In a medium bowl stir together sour cream, flour and water until smooth. Gradually stir in about 1 cup of the hot broth into the sour cream. Return the sour cream mixture to the cooker. Stir to combine. Cover and cook about 30 minutes more until thickened and bubbly. Server over noodles, if desired, sprinkle with parsley.
I’ll be using egg noodles for mine and I like to stir them into the mixture to absorb all the flavors before serving. This will make enough for some generous servings for more than 2 days for me.
This is supposed to be a warmer day than usual for us and many will be taking the opportunity to use their pools again. I hope to get out and enjoy some sunshine while we still have it.
I hope you all have a SUPER Saturday !

Every day should be celebrated !
Yes, even in times of great sadness, every day should be celebrated. I'm happy your DIL and 'Ray of Sunshine' are surrounded by family who loves them.
After a few days of near-Fall like weather, we're supposed to be back in the 90's next week. Summer can't make up its mind, darn it. We do enjoy a good beef stroganoff, however, and your recipe sounds like a winner!
Thoughts and prayers for your DIL and her family as they mourn the loss of her mother!
Birthday blessings for your grandson as well!
Blessings,
Sue
Love from here. Enjoyed the read and love October!
