THOUGHT FOR TODAY

Today I will be celebrating with a TV dinner of my own. I make them up by freezing leftovers from the dinners I prepare. The leftovers from the dinner recipe I’m sharing can be easily frozen to eat later on.
It’s my day to cook for the weekend and on the menu is:
Sheet pan Chicken Cutlets with Brussels Sprouts and Sweet Potatoes
Makes 4 servings
1 lb. sweet potatoes scrubbed and cut into 1/2 inch pieces
2 Tbsp olive oil, divided
3/4 tsp salt, divided
3/4 tsp pepper, divided
4 cups Brussels sprouts, trimmed and halved or quartered
1 1/4 lbs chicken cutlets
1 tsp ground fennel
3 Tbsp. crumbled cooked bacon
Position rack in bottom third of oven, preheat to 425 degrees
Toss Sweet potatoes with 1 Tbsp, oil and 1/4 tsp each salt and pepper in a large bowl. Spread evenly on a baking sheet. Roast for 15 minutes. Toss Brussels sprouts with remaining oil and 1/4 each salt and pepper. Stir into the sweet potatoes on the baking sheet.
Sprinkle chicken with fennel and 1/4 tsp. salt and pepper. Place on top of vegetables. Roast until chicken is cooked through and vegetables are tender. About 20 minutes.
Transfer the chicken to a serving platter, stir in bacon in the vegetables and serve with chicken.
I don’t use fennel in my recipes because I don’t care for the taste but otherwise will follow this recipe. It’s a full meal in one pan.
This afternoon I’ll be going out with my daughter to do a little shopping at Hobby Lobby while her son attends a belated birthday party for our Mr. Wonderful. She figured we could shop while while the kids are having fun. It’s just for kids and not adults.

TV dinners are great when you don't want to cook!
I can remember when they came out. I can also remember when they were a life saver when we both worked. My favorite was Salisbury Steak.
