THOUGHT FOR TODAY
This DIL’s birthday is another of my long distance celebrations.
I did put a card in the mail to her with lots of love and birthday wishes. She’s been going through a rough time right now as her mom is in hospice and she’s been at her side. A prayer or two for them wouldn’t hurt. Their youngest son’s birthday will be celebrated tomorrow!
I remember the first time I had guacamole at DS#2’s wedding, It was too hot for me, but thankfully it now comes in mild. I buy the snack packs in the grocery store of Wholey Guacamole That way I have some available when I need a quick snack. It’s nice to know that something that good is also good for you too.
It’s Friday and my day to cook something new and on the menu for this week is:
Tomato Soup with Grill Cheese Croutons
Makes 4 servings
2 Tbsp.butter, divided
1 onion, chopped
3 cloves garlic, chopped
1 28 oz. can whole peeled tomatoes
3 cups vegetable broth
1/4 cup heavy cream, optional
1/4 tsp. salt
1/4 tsp. pepper
2 large slices country bread
3 slices sharp Cheddar Cheese
1/4 chopped fresh basil
Heat 1 tsp butter in a large sauce pan over medium heat until butter melts. Ad onion and celery; cook stirring occasionally, until softened. Add garlic, cook stirring until fragrant.
Stir in tomatoes with juice. Add broth and bring to a lively simmer over high heat. Reduce heat and cook for 10 minutes.
Puree the soup in the pot using an immersion blender or in batches is a blender. Stir in cream if using, salt and pepper.
Meanwhile Preheat a panini maker. Spread one slice of bread with remaining 1 Tbsp. of butter. Turn the slices over and top with cheeese. Top with other slice, butter side up.
Cook the sandwich until golden brown and cheese is melted. Cut the sandwich into bite size pieces.
Divide the soup amoung 4 bowls. Top each with grilled cheese croutons and sprinkle with basil.
I will used crushed tomatoes in mine to save having to puree the soup. I also don’t have cheddar cheese but will use colby cheese instead because that is what I have on hand. I don’t have a panini maker so will do my grilled cheese in the skillet.
I’m going to go to my pharmacy today to get the new updated covid booster shot. I had gone there the other day when I got my flu shot and they told me they had the Pfizer shot. My other shots were all Moderna, but they assured me they could be mixed effectively. I didn’t have any side effects from my other shots so I’m hoping this one is no different. Better to be vaccinated than to worry, I say.

Right after I wrote this message my son called ti telll ne that is mother in law had passed away early this morning. My sincere sympathies go out to all the family.
What a sad turn of events, particularly on your DIL's birthday! Lifting my prayers for her and all her family.
I, too, need to take time to get my updated vaccine. I just can't decide to get it first, or the flu shot. Aside from a sore arm, I've never had side effects -- except last year I made the mistake of having them both at the same time -- one in each arm. Sure made it uncomfortable to sleep!
Bless your DIL as she grieves....I'm so sorry....
My grand quads all know how to make home made guacamole! (I always have trouble spelling that!) Anyway - theirs is always delicious! Of course they learned from their mama!
And I always enjoy seeing what you're preparing for your meals.
