I got to celebrate yesterday evening with this grandson. Something I rarely get to do, as so many of the grands live far away. We had a delicious dinner and a yummy birthday cake too. I’m just so thankful, I have a few that do live close by.
As I have an enclosed patio, I often eat out there. It has screens on the windows, so no bugs get in. So I will definitely be celebrating today. My large family used to go on a lot of picnics at our local parks. It was free and there was plenty of room for the kids to play. They were some of my favorite times.
Today is the day I plan a new menu for the week ahead so I can do my grocery shopping from that. It’s a way to get only what I need.
Monday-Turkey Apple Brie Sandwiches
Wednesday- Cheesy Ground Beef and Broccoli Casserole
Friday-Spinach and Artichoke Dip Pasta
Weekend - Sheetpan Chicken Cutlets with Brussels Sprouts and Sweet Potatoes
On the menu for today is:
Apple Topped Ham Steak
Makes 8 servings
4 fully cooked boneless ham steaks
1 cup chopped onion
3 cups apple juice
2 tsp. Dijon mustard
2 green apples, thinly sliced
2 red apples, thinly sliced
2 Tbsp. cornstarch
1/4 cup cold water
2 Tsp. rubbed sage
1/4 tsp. pepper
In a large skillet coated with cooking spray brown ham steaks over medium heat. Remove and keep warm.
In same skillet, saute onion until tender, stir in apple juice and mustard, bring to a boil. Add apples. Reduce heat, cover and simmer until apples are tender
Combine water and cornstarch until smooth; stir into apple juice mixture. Bring to a boil and cook and stir. Stir in sage and pepper. Return steaks to skillet, heat through.
I only have red apples so I’ll be using what I have on hand. This is a quick weeknight dinner and is very easy to make.

It's still far too hot here to be eating outdoors; I'm thankful Tom doesn't mind grilling outside. Friday's spinach and artichoke dish sounds wonderful; in fact, I'm putting artichoke hearts in my WM cart now!
