I usually keep bananas on hand, but when I went to the store on Wednesday, all of the ones they had were too ripe. I like to get them a little on the green side so they’ll last longer. The don’t last very long.
For today I’ll probably run to the store and get some to enjoy.
It’s my day to cook for the weekend and on the menu is:
Southern Fried Chicken with Gravy
1 cup flour
1 tsp onion powder
1 tsp paprika
3/4 tsp. salt
1/2 tsp rubbed sage
1/2 tsp pepper
1/4 tsp dried thyme
1 egg
1/2 cup milk
3 lbs. fryer chicken
Oil for frying
for gravy:
1/3 cup flour
1/4 tsp. salt
1/4 tsp. dried thyme
1/4 t 1/2 tsp pepper
2 1/2 cups milk
1/2 cup heavy whipping cream
In a shallow dish, combine the first 7 ingredients. In a shallow bowl beat together milk and egg. Dip the chicken pieces in the egg mixture, then place in flour mixture, a few pieces at a time and turn to coat.
In a large skillet heat 1/4 inch oil; fry chicken until browned on all sides. Cover and simmer for 35 to 40 minutes until chicken is tender, turning occasionally. Uncover and cook 5 minutes longer. Drain on paper towels and keep warm. Drain skillet, reserving 3 Tbsp. drippings.
For gravy, in a smal bowl, combine flour, salt thyme and pepper. Gradually whisk in milk and cream until smooth; add to skillet. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Serve with chicken.
I’ll be making some mashed potatoes to have with mine to put the gravy on and probably a side of green beans.
It’s supposed to be a great day so I hope to get out and go to the store.

Ah, the ultimate comfort food dinner!
I had more than my share of fried food yesterday, so need to watch it doesn't become a habit.
What a surprise to learn bananas are fruit of an herb!!! I remember when my parents visited a banana plantation/rum distillery(?) in the islands and came home with a bottle. I felt SO very grown up when they'd drizzle a wee bit atop my vanilla ice cream for special occasions! Today, banana pudding is one of my favorite things -- as is banana nut bread season, just around the corner.

That is the way my Mom taught me.
I do love bananas. BUT my favorite was is a banana sandwich with a slice of cheese mayo on white bread with a glass of milk.
