THOUGHT FOR TODAY
Extend vegetable season with squash and zucchini.

This time of year most gardens have more zucchini that they could ever eat, so many give it away. At one time I had a neighbor who would leave it in a basket on the porch for us to enjoy. I never saw him leave it there, but all of the sudden it would be there when I looked outside.
I do like zucchini and often include it in meals I make so will definitely celebrate the day, but on my menu for today is:
Lime Chicken Tacos
1 1/2 lbs. boneless skinless chicken breast halves
3 Tbsp. lime juice
1 Tbsp. chili powder
1 cup frozen corn, thawed
1 cup chunky salsa
12 fat free four tortillas, warmed
Optional: Sour cream, pickled onions, shredded lettuce and shredded Cheddar cheese.
Place chicken in a slow cooker. Combine lime juice and chili powder; pour over chicken. Cook covered on low until chicken is tender, about 6 hours.
Remove chicken. When cool enough to handle, shred meat with 2 forks and return to cooker. Stir in corn and salsa. Cook covered on low for about 30 minutes. Place filling on tortillas. If desired serve with sour cream, pickled onions, lettuce and cheese.
I’m trying to keep my recipes on the light side for the hot weather we are experiencing and this will make a delicious dinner for me.
It’s been so hot no one really has a big appetite these days, but we all need to remember to keep hydrated and drink plenty of water !

One zucchini plant will yield enough for a family of four. Two plants assure some leftover for additional family and friends. With three zucchini plants, you’ve got your entire street covered. And a garden or yard with five plants , all filled with blooms. Be ready to feed the entire block.

Vegetables are a must on a diet, I suggest carrot cake, zucchini bread, and pumpkin pie.

Try some zucchini today. You can Grill it, bake it into bread, or add it to a salad. It's very versatile.
I knew there was something I forgot to pick up at the store this morning! I'm just beginning to realize how many ways it can be prepared. And if I should mess up, no worries -- it's so inexpensive!
My favorite way to cook zucchini is in muffins!!!
