Back in the day when I was at home with little children every day, when my husband came home, I’d to out the door and take a walk. I needed a time out just for me. Walking is very good for taking stress away. He didn’t mind at all as he knew I’d feel much better and happier when I got back home. It wasn’t a very long walk, at the most half an hour.
Today, being Monday, I had a good rest yesterday as Sunday is always my day to rest and relax. But even at that, I work a little, then rest a lot. There is only so much I can do at a time. I do some work, then sit down and read my book for awhile and then get back up and do a little more. Little by little, it all gets done.
If you’re good to yourself you’ll be better for others too! When you work too long, you get tired and cranky. So give yourself a little break and everyone will be better off.
And part of being good to yourself is also eating healthy and nutritious meals. On the menu for today is:
Fajita in a Bowl
Makes 4 servings
1 Tbsp. brown sugar
1 Tbsp chili powder
1/2 tsp salt
1 lb beef flank steak
12 miniature sweet peppers, halved and seeded
1 red onion, cut into thin wedges
2 cups cherry tomatoes
2 ears sweet corn, husks removed
12 cups torn mixed salad greens
1 cup fresh cilantro leaves
1/2 cup lime vinaigrette
optional ingredients: cheese, lime wedges and tortillas
In a small bowl, mix brown sugar, chili powder and salt. Rub into both sides of steak.
Place peppers and onion on a grill rack over medium heat Grill covered until crisp tender , stirring occasionally. Add tomatoes during the last 2 minutes. Remove from grill.
Place steak and corn directly on the grill rack, close the lid. Grill steak until a thermometer reads 135 degrees for medium rare. About 10 minutes on each side. Grill corn until lightly charred. Turning occasionally. 10 minutes.
Divide greens and cilantro amoung 4 bowls. Cut corn from cobs and thinly slice across the grain . Place in a bowl . Top with vegetables, drizzle with vinaigrette. If desired serve with cheese, lime and tortillas.
I happen to have leftover chicken to use so I’m going to use that and not the steak. I’ll just warm it up on the grill and put the spices on it. And I’m using corn out of a can, not off the cob. Other wise it sounds like a good meal for today. I just like to use what I have and not waste anything.

In order to be good for others, you have to be good to yourself.
Sometimes it feels like I've a PhD in relaxation! Self-care is mighty important, yes. I once had a coworker who, when things grew stressful, would go outside and walk around the building 4-5 times to calm down.
