This granddaughter’s birthday is another one of my long distance celebrations. A card has been sent out in the mail full of birthday wishes and love. She is the youngest in her family and the baby of our family, my youngest grandchild.
For years I volunteered serving our youth. I was a scout leader and also worked with our church youth group. I figured if my children were involved, then I should be too. It was one sure way to find out what they were doing. I had a great time doing the activities we did and participated for 12 years. Now I don’t do much with youth but baby sit my grandchildren. They are all a joy to me.
Our youth are our future and we should do all we can to support them.
It’s my day to cook up something new here at house.
On the menu is:
Linquini with Broccoli Rabe and Peppers
Makes 6 servings
1 lb. broccoli rabe
1 pkg, 16 oz, linquine
3 Tbsp. olive oil
2 anchovy fillets, finely chopped, optional.
3 garlic cloves, minced
1/2 cup sliced sweet roasted red peppers
1/2 cup pitted Greek olives, halved
1/2 tsp crushed red pepper flakes
1/4 tsp. pepper
1/8 tsp salt
1/2 cup grated Romano cheese
Cut off 1/2 inch of ends of broccoli; trim woody stems. Cut stems and leaves into 2 inch pieces . Cook linquine according to package instructions. adding broccoli during the last 5 minutes of cooking. Drain, reserving 1/2 cup of pasta water.
Meanwhile in a skillet, heat oil over medium high heat. Add anchovies, if using, and garlic. Cook and stir 1 minute. Stir in red peppers, pepper flakes, pepper and salt.
Add linquine and broccoli. Toss to combine Adding pasta water as desired to moisten. Serve with cheese
I couldn’t find brocolli rabe at the store so used regular brocolli and I didn’t add anchovies. Otherwise it should be a tasty dish and something different for today. Pasta is always good !

Yes, youth deserve our support - both in service and prayer. I can't imagine how difficult it must feel for a young person, trying to successfully navigate this sometimes scary world.
