My oldest son died a few years ago now, but that doesn’t mean he’ll ever be forgotten. One thing I’ll never forget is all the joy he brought into my life. I know he is now in a better place and what more could any mother wish for her son.
So for today I’ll be lighting my birthday candle and remembering him.
There is no doubt that I am a coffee lover. I have a Kureig coffee maker and enjoy at least 2 cups every morning. I like the idea of being able to choose different flavors and have tried a wide variety of them. Right now I’m enjoying Green Mountain’s Nantucket blend. I also have on hand Starbucks Fall Blend to have on September 1st, which is when I’ll begin decorating for Fall.
Today I’ll be cooking up something new and on the menu is:
Rigatoni with Sausage and Peas
Makes 6 servings
12 oz. uncooked rigatoni or large tube pasta
1 lb. bulk Italian sausage
4 cloves garlic, minced
1/4 cup tomato paste
1 can, 28 oz. crushed tomatoes
1/2 tsp dried basil
1/4 tsp. crushed red pepper flakes
1 1/2 cups frozen peas
1/2 cup heavy whipping cream
1/2 cup crumbled goat or feta cheese
thinly slice fresh basil, optional
Cooked rigatoni according to package directions.
Meanwhile in a Dutch oven, cook sausage over medium high heat about 8 minutes or until no longer pink, breaking into crumbles. Add garlic, cook 1 minute longer. Drain. Add tomato paste and cook and stir until the meat is coated. Stir in tomatoes, dried basil and pepper flakes, bring to a boil. Reduce heat, simmer uncovered until thickened, stirring occasionally.
Drain rigatoni; stir into sausage mixture. Add peas and cream; heat through. Top with cheese and, if desired, fresh basil.
I will be using Cream cheese and not goat cheese today and I’ll cut this recipe in half as it makes so much. You could also substitute with ricotta cheese.
Thunder storms are expected here today and it’s hot out, so I’ll be staying in and getting some work done in the house.

How did I miss it was Coffee Day??? Though for me it's Coffee Day every day. May your son's memory continue to be for a blessing.

What would we be without our morning cups of coffee to look forward to? Sometimes I even brew a third cup and keep for sipping late in the afternoon as a pick-me-up.
