THOUGHT FOR TODAY
You should eat a waffle! You can’t be sad if you eat a waffle.
Lauren Myracle
My favorite waffles are French waffles you get at the fair. but when I do have waffles at home I like them covered with syrup and butter. I get the frozen kind that can be heated up in the toaster. I will celebrate today and have 2 or 3 for lunch. They are good for any meal and I also enjoy breakfast for dinner often.
I used to have a waffle maker but gave it away. I do have a sandwich maker that also makes waffles, but prefer the easy way and get the frozen ones
Our county fair is going on right now but I’m not sure if I’ll be able to go. It’s a lot of walking for me to do. Today’s pictures are from when I went with my sister and BIL a couple of years ago.
Today is the day I make up a new menu for next week to do my grocery shopping from. This way I only buy what I know I’ll need.
Monday - Rigatoni with Sausage and Peas
Wednesday - Apple Topped Ham Steak
Friday - Fish and Fries
Weekend - Grandpa’s German Style Pot Roast
On the menu for today is:
Slow Cooker Baked Ziti
Makes 6 servings
1 container, 15 oz. ricotta cheese
1 large egg beaten
1 tsp. dried basil
1/2 tsp. crushed red pepper flakes, optional
1 jar, 24 oz, meatless pasta sauce
2 cups uncooked ziti
1/4 cup water
2 cups shredded mozzerella cheese
1/4 cup minced fresh basil
Grated Parmesan cheese, optional
In a small bowl, stir together ricotta cheese, egg, basil and if desired red pepper flakes; set aside.
Pour pasta sauce in a slow cooker. Evenly top sauce with pasta, pour water over top Drop heaping Tbsp. of the ricotta cheese mixture over pasta Sprinkle with mozzarella cheese.
Cover and cook on high until heated through and pasta is tender, about 2 1/2 hours. Top with fresh basil and if desired Parmesan cheese. Serve immediately.
This will make way more than what I need so I will be cutting the recipe in half. Even at that I’ll have leftovers for tomorrow. You could also us rigatoni or penne pasta in this dish. It doesn’t have to be ziti. This is a great dish to have when you don’t want to turn the oven on.
We’re to be in the upper 70’s today and sunny so it will be a great day to get out and about. Not too hot!
I hope you all have a WONDERFUL Wednesday !

Enter into His courts with thanksgiving — and in His presence is fullness of Joy!
Please pray for God's protection of
our troops and HIS wisdom for their
commanders.
Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters and EMT’s.
We ask this through Christ our Lord.
Amen
GOD BLESS YOU ALL!
ADVICE FOR TODAY
We need to remember what’s important in life: friends, waffles, work. Or waffles, friends, work, it doesn’t matter. But work is third.

A little smile, a word of cheer,
A bit of love from someone dear…

Waffles are good any time of day. Breakfast, lunch or dinner!
I never had a waffle until I was grown. The closest thing to that was mama's pan cakes. BUT one of our favorite breakfasts is from the Waffle House. I enjoy a pecan Waffle while sherry prefers the Blueberry waffle.
As always, enjoyed the visit. Hope you have a great day!

I don't remember having a wtaffle since leaving home in 1968! Mother's was one of those heavy things with a cloth-coveted cord. Of course, Teflon and no-stick spray hadn't been invented. What a chore it must have been to keep clean!
I just Googled that German-style pot roast. It sounds good!
Your ziti recipe sounds delicious! I would love it but Louis Dean would want meat added!
