THOUGHT FOR TODAY

This past week, I got to go to this granddaughters’s birthday party which is something I don’t always get to do. We celebrated the date just on a different day. It turned out to be a nice day even though some showers threatened. The kids got to enjoy a lot of cousin time and party together. They even got in the pool to party! We all had a good time and enjoyed the day. It’s always a joy for me to see my family get together. Not everyone was there, but we who were had a lot of fun. The pictures are from her party in 2020.
It’s hard to believe July is over already and August is here. Now the theme seems to be all about back to school time. Families will plan their last vacation days and get ready for the end of summer.
For me, every year seems to go by faster than the one before. Time just seems to blend together. Before we know it another year will be beginning.
I’m trying to enjoy every last day of summer. Some are wishing for Fall and cooler days, but not me. I want to enjoy what I have right now. Too soon colder days will come, and I like to be warm.
Monday’s are my day to cook something new to eat and on the menu is:
Chicken Parmesan Burgers
Makes 4 servings
3 Tbsp.olive oil, divided
1 onion, finely chopped
2 garlic cloves, minced
3/4 cup marinara sauce, divided
1/2 cup finely chopped or shredded mozzarella cheese
1/2 cup dry bread crumbs
1 tsp. Italian seasoning
1 tsp. dried oregano
1/2 tsp. salt.
1/2 tsp. pepper
1 pound ground chicken
4 slices mozzarella cheese
4 hamburger buns, split and toasted
1/4 cup shredded Parmesan cheese
Fresh basil leaves, optional
In a large skillet, heat 1 Tbsp. oil over medium high heat. Add onion and cook and stir until tender. Add garlic; cook 1 minute. Remove from heat and cool slightly.
In a large bowl combine 1/4 cup marinara sauce with chopped mozzarella cheese, bread crumbs, seasonings and onion mixture.
Add chicken, mix lightly by thoroughly. With wet hands, shape into 4 1/2 inch thick patties.
In same skillet, heat remaining oil over medium heat. Cook burgers until a thermometer reads 165 degrees. About 5 minutes on each side. Top with sliced mozzarella cheese, cook covered until cheese is melted.
Serve in buns, top with remaining marinara sauce, Parmesan cheese and if desired, basil leaves.
I have some premade frozen chicken patties so will not be making my own patties today but everything else in the recipe will be used. Sounds like a delicious sandwich to me.

Good morning girlfriend! 😊 That's sure another yummy-sounding recipe; I'll have to skip the bread; unfortunately, I overdid the carbs these last few months.
So glad you were able to attend your Precious One's birthday celebration and the rain held off. You're right, there's nothing like it! I like what another blogger says, "You have to look for your joys."

I did not realize July had left us!!! WE just visited two girlfriends, they are sisters mid 90's and doing well. WE were talking about sisters and girl friends. Amazing and did not know the day was dedicated to them.
