Eat a Cranberry Day is today. Cranberries are good for you. Native to North America, cranberries are grown in bogs, and are primarily grown in New England. When the pilgrims landed at Plymouth Rock, they found Native Americans harvesting them, and eating them. Native Americans also used them as dyes for clothing, and for medicinal purposes.
Cranberry sauce is regarded as an indispensable part of traditional American and Canadian Thanksgiving menus and some European winter festivals. Cranberries have been marketed as a super fruit due to their nutrient content and antioxidant qualities.

I do love cranberry juice and drink it often. This time of year we also see cranberries in a lot of things from cakes to cookies and lots in between.
I found a new way to use cranberries so thought I’d share this recipe today. Jello salads used to be a lot more popular than they are now, but maybe they are making a comeback.
THANKSGIVING CRANBERRY JELLO SALAD
1 lb. fresh cranberries
2 1/2 cups water
2 cups sugar
2 small pkg cherry Jello
1 pkg miniature marshmallows
1 cup apples, diced
1 cup diced celery
1 cup nuts
Cook cranberries in 2½ cups water until they pop. Add sugar, Jello, and marshmallows. Cook five minutes longer, stirring constantly.
Remove from heat and add diced apples, celery and nuts. Refrigerate. This salad is better if made the day before use.
The days ahead are going to be super busy ones for me. I’ve packed away all the fall decor here in preparation for Christmas decorating. Theres food to buy, to cook and treats to be made for the party on Friday. I can’t wait to see how the gingerbread houses turn out !

I do like cranberry sauce at Thanksgiving; always a tradition we had growing up. I've made a few recipes with cranberries and chicken at other times of the year. So true that Jello salads are not as popular as they were at one time, but I do like the recipe you shared here. Sounds like a great week you have planned, Ma, and I too am anxious to hear how the gingerbread houses come out :)

I am still not a cranberry lover, though I have had some juice now and then. :-)
When I was pregnant, I drank enough cranberry juice to float a boat!
Don't know why, I just wanted it! My son will turn 26 on Nov. 28th, so I am talking a few years ago! LOL.
I like cranberry sauce too!
