Today is Fresh Veggies Day. Take a vow to eat healthy today and everyday, with fresh veggies for every meal, and for snack, too. Fresh vegetables are tasty, far better tasting than canned or frozen vegetables. They are also healthy and highly nutritious. This makes it easy to add fresh vegetables to the menu at every meal, and for snacking. This time of year, there are plenty of fresh vegetables at your local grocery store, or in your backyard vegetable garden.

Back in the day we used to serve a platter of fresh veggies with most any meal. We called it a relish dish. Very often that would include some pickles of some type and maybe some olives too. A vegetable such as corn, peas, or green beans was also on every dinner table.
As I happen to have a huge bag of broccoli here at my house I did a search to see if I could find something different to do with it and the recipe below is what I came up with. I’m still striving to find a new recipe to try out every week this year.
Easiest Pasta and Broccoli Recipe
12 oz uncooked pasta
6 1/2 cups fresh broccoli florets, no stems
5 cloves garlic, smashed and chopped
1/4 cup grated Parmesan or Romano
2 tbsp olive oil, divided
kosher salt and fresh cracked pepper
Bring a large pot of salted water to a boil. When water boils, add pasta and broccoli at the same time and cook according to pasta instructions for al dente. When pasta is almost done cooking, reserve about 1 cup of the pasta water and set aside. Drain pasta and broccoli.
Return the pot to the stove and set heat to high; add 1 tbsp olive oil, when hot, addgarlic. Cook until golden, reduce flame to low and add pasta back to the pot.
Mix well, add remaining olive oil, grated cheese, salt and pepper to taste mixing well and smashing any large pieces of broccoli to break up.
Add 1/2 cup of reserved pasta water and mix well adding more if needed.
Serve in pasta bowls with additional grated cheese on the side.
Makes about 9 cups. With just a few ingredients and only one pot, this recipe will put dinner on the table in 15 minutes. And for a little extra flavor I sprinkled some bacon bits on top !
Broccoli belongs to the cruciferous vegetable family, which includes kale, cauliflower, Brussels sprouts, bok choy, cabbage, collard greens, rutabaga and turnips. These nutrition power houses supply loads of nutrients for little calories.
If you are trying to eat healthier, cruciferous vegetables like broccoli should be at the very top of your grocery list.

That broccoli and pasta salad does look good, Ma. I think it would be refreshing too on a summer day. I do remember growing up we had lots of fresh veggies and fruit around to snack on. It definitely is better for us than some of the other things I might want to eat. We've been trying to do more salads here which is good for getting veggies in :)

I love fresh veggies. As a kid I would come home from school, go into our garden and pick a green pepper, hose it off and eat it right there. Today, one of my favorite meals is a veggie plate.
