Although my daughter and DS#3 share the same birth date, they were born one year apart.  I always think it was like having twins with them being so close in age and they always were the best of friends too.  For the childhood days anyway it seemed they did everything together.  Now they are grown and have families of their own.

I hope to celebrate with them today.  Some of the pictures shown are of their birthday celebration last year and the cake was a strawberry jello cake.  Our strawberry season here in northern Ohio is a short one, usually lasting about 3 weeks, so we have to enjoy them while we can.

Here’s a recipe for a strawberry dessert that is easy to make should you want to enjoy some strawberry goodness too. This easy, creamy strawberry pie is cool and refreshing but not overwhelmingly sweet. It's just right!

 2 cups fresh strawberries, divided 

2/3 cup boiling water

1 pkg. 3 oz. Strawberry Flavor Gelatin 

ice cubes

1/2 cup cold water

1 tub, 8 oz. Cool Whip whipped Topping

1 ready to use graham cracker crumb crust 

 Slice 1 cup strawberries; refrigerate for later use. Chop remaining berries; set aside. Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Add enough ice to cold water to make 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.

Whisk in COOL WHIP. Stir in chopped berries. Refrigerate 20 to 30 min. or until mixture is very thick and will mound. Spoon into crust.

 Refrigerate 6 hours or until firm. Top with sliced berries just before serving.

Counting at least 3 things every day that I'm thankful for.  There is truly is always something to be thankful for.
