National Corn on the Cob Day is always June 11th. Millions of people love sweet corn on the cob. As summer nears, we can't wait to bring out the salt and pepper, and boil, steam or grill some fresh, sweet, corn on the cob.
National Corn on the Cob Day encourages us to celebrate and enjoy this tasty summer time treat.

I have a love affair with tomatoes and corn. I remember them from my childhood. I only had them in the summer. They were extraordinary.

Knee high by the Fourth July, goes the old farmer’s rhyme about the height of corn crops. Good thing we won’t have to wait until July to start enjoying one of summer’s sweetest vegetables, because I’ve already had some that has been shipped our way and it’s on the shelves at the grocery store for us to enjoy. Whether you boil it in a pot, nuke it in the microwave or barbecue it on the grill, fresh corn on the cob is simple to make and delicious to eat.
It doesn’t happen often but every now and then we have leftover corn on the cob and I found this recipe for using it up and it sounds delicious
Fried Corn
5 ears corn
1 teaspoon black pepper
1 cup water
4 tablespoons butter or margarine
1 1/2 teaspoon salt, or to taste
1/2 cup flour
1/4 cup bacon drippings
Cut corn off cob, about half the thickness of the kernel, then scrape cob. Add salt, pepper, and flour. Mix with the water. If too thick, add more water as the corn cooks.
Pour corn mixture into a hot skillet that contains the bacon drippings. As corn cooks, add margarine or butter. Cook on medium heat until corn bubbles, stirring constantly.
Reduce heat to low. Let cook for about 30 minutes, stirring often. A crust will form around and on the bottom of the skillet.
There are many uses for corn. Corn is a vegetable, grain, sweetener, fabric, beverage, fuel, plastic, perfume, vitamin/supplement, adhesive, and so much more. Corn. It makes all things just a little bit better it seems, that’s why they put it into everything.

Yum on the fried corn! Nothing better than an ear of corn that has been on the BBQ :) When we went to the fair last week they had a vendor selling BBQ corn; lots of people buying it :)

I have been AWOL, MA, sorry about that! I have never seen that recipe for skillet corn before, and would like to try it... Keith can't eat it on the cob anymore.
