February 7th. is National Fettuccine Alfredo Day: A delicious pasta dish is just perfect for a cold winter's evening. To celebrate this food holiday prepare a simple Alfredo sauce and combine it with grilled chicken and fettuccine.
Winter is the time for comfort, for good food and warmth, for the touch of a friendly hand and for a talk beside the fire: it is the time for home. It is no season in which to wander the world as if one were the wind blowing aimlessly along the streets without a place to rest, without food, and without time meaning anything to one, just as time means nothing to the wind.
Edith Sitwell
THOUGHT FOR TODAY
There is nothing like staying at home for real comfort.
Jane Austen
February is often thought of as the time for chocolates and romantic dinners for two, but with all this cold and snowy weather it is also a time for comfort food. Fettuccine Alfredo is a warm and tasty dish for a cold winter day.
I found this easy fettuccine recipe using butter and grated cheese to share with you all today:
1 pound fettuccine pasta
1 1/2 cups half and half
5 tablespoons butter, cut into pieces
pinch nutmeg
1/4 teaspoon ground pepper
3/4 cup grated Parmesan cheese
Cook fettuccine noodles following package directions. Meanwhile, in a large skillet, bring half and half just to a boil. Reduce heat and simmer, stirring constantly, for 4 minutes. Remove from heat. Drain fettuccine well and add to half and half in skillet. Over medium heat, toss well and add butter pieces, nutmeg, pepper, and 3/4 cup of the Parmesan cheese. Toss again while heating through. Serve with a green vegetable or salad and more grated Parmesan cheese.
Serves 4
Comfort foods not only bring back warm memories, they tickle your taste buds, and soothe your soul.
I hope you all have a fantastic Friday!

I have counted at least 3 things every day that I'm thankful for this past year and have now reached my 1000 gifts. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.
