It's FINALLY FRIDAY!
It’s going to be a great Friday for me as I’m taking a half day off from work and then DD and I are going baby shopping for our little Lucky. Before h
e was born we had no idea if we would have a girl or a boy so now we can shop for something for a little boy.
Tomorrow we are going to go for a visit with him and his Mom and Daddy too. I’m taking some Sloppy Joes and Macaroni salad up so I’ll be preparing that today too.

NEW IN THE KITCHEN
We all know that Friday night is pizza night for me. Its straight from the freezer and heated up in the microwave. No fuss and no mess for me. Here is a recipe for something a little different you might like to try
Pizza Soup
1 Tb. olive or vegetable oil
1 medium onion, sliced
1 large green bell pepper, cut into 1-inch pieces
1 large red bell pepper, cut into 1-inch pieces
2 cloves garlic, finely chopped
2 cups water
2 cans (14½ oz. each) diced tomatoes in olive oil, garlic an
d spices, undrained
1 can (6 oz.) tomato paste
1 cup sliced mushrooms (3 oz)
1½ ts. Italian seasoning
1 can (15 to 16 oz) kidney beans, rinsed and drained
1 can (15 to 16 oz) white beans, rinsed and drained
6 slices french bread, each ½ in. thick
1½ cups shredded mozzarella cheese
Heat oil in pan over medium heat. Cook onion, bell peppers
and garlic in oil, stirring occasionally, until onion is tender. Stir in water, tomatoes, and tomato paste until blended. Stir in remaining ingredients except bread and cheese. Heat to boiling; reduce heat. Cover and simmer 10 minutes, stirring occasionally. Just before serving, heat oven to 425. Place bread on ungreased cookie sheet. Toast bread in oven about 6 min., turning over once until golden brown.
The recipe didn’t say but I think it would be great to sprinkle a little mozzarella cheese on top of each bowl of soup when you serve it and I’d also b
utter the slices of bread before toasting.

Father, Help me to think anew and see things more broadly than in terms of success and failure. Lead me always to trust and place myself confidently in your hands.

AROUND HOME
The sun is supposed to shine here for the next few days and it will be warmer too as we should reach the 40’s by tomorrow. As I was driving home yesterday I did notice that there were several patches of bare ground showing where the snow had melted. No bare ground at my house though, everything is still snow covered.
They say our meltdown will be a slow one as the nights are still down in the 20’s so that is a good thing. No major flooding anyway.
