It's FINALLY FRIDAY!
SNOW returned to northern Ohio Thursday evening. Very cold temps blew in and with the wind chill we sailed right down below freezing once more. Good old March is living up to its reputation after all.
Thankfully the end of this work week has come. It’s has been really tough work trying to teach my replacement all the things I do. She has been overwhelmed and stressed to say the least. I sure do pray it all works out for them. On the surface it seems an easy job but it is detail oriented and encompasses so many things.

NEW IN THE KITCHEN
Friday’s are Pizza Day at my house
When my children were growing up they loved Taco Pizza. The school cafeteria offered it regularly on the lunch menu too.
Today’s recipe is one I found on line
1 pkg. pizza crust
1 lb. ground beef
1 pkg. taco seasoning mix
1 1/2 c. water
2 tbsp. butter 2 sm. tomatoes
2 to 4 c. grated cheddar cheese (according to taste)
2 to 3 c. shredded lettuce
Sour cream
Taco sauce
In large bowl, mix the pizza crust according to directions on package which usually calls for 1/2 cup water. Melt the butter and pour on top of dough before setting it aside to raise.
While dough is rising, brown ground beef and add taco seasoning mix according to directions on package, usually one cup of water. Stir beef while simmering to prevent sticking. Heat oven to 425 degrees. Grease pan, chop tomatoes and grate cheese.
Mix butter into dough and spread dough in pan. Add beef and place in oven for 15 minutes. Meanwhile, chop lettuce, take pan from oven and add tomatoes and cheddar cheese. Put pizza back in oven for 3 minutes then remove. Add lettuce on plate, so leftovers can be refrigerated and reheated. Add sour cream and taco sauce

AROUND HOME
I’ve not done much at all this week except to go to work. I’ve been much too exhausted after work each day to even consider doing much in the evening. Tonight I’m going to the visitation for my BIL’s father that passed away.
Saturday morning I take the Silver Streak in for her regularly scheduled maintenance and check up. I have to keep her running yet for awhile.
Other than church on Sunday it should be pretty much an at home weekend. That is a very good thing as there is much to do here.

oh no...not snow again..
It has been very cold and rainy here! Today though, looks like the sun may shine. I think March is going out like a Lion though! Love the looks of that Taco Pizza! I am sure my kids would have loved it!
