It's MONDAY!
Back to work !
It’s supposed to be raining today but looking at the long range forecast we will have a few days of sunshine too. It won’t be as warm here as it was last week, but still it is better than below freezing and snow.
My Sunday flew by in a flash and I really didn’t do much at all. That is ok as I needed the rest. The training days last week left me tired out. The next 14 days of work that I have left after today will all be full ones and busy ones.
After that I can enjoy my retirement!

NEW IN THE KITCHEN
Hot Beef Sandwiches (from the Sunday Roast)
Depending on how much you have leftover you can make delicious and easy hot beef sandwiches for dinner. I always tried to make sure there was plenty of beef, gravy and mashed potatoes left for a meal the next day for my family.
Reheated sliced roast beef in the gravy.
Reheated or freshly cooked mashed potatoes
2 slices bread (your choice) per serving
Top one slice of bread with roast beef and gravy
Cover with the 2nd slice of bread and put more gravy on top
Serve with hot mashed potatoes!
This is not a sandwich you can pick up with your hands but one you eat with a fork. You can also serve it as an open faced sandwich rather than layer the two pieces of bread. I like more gravy on my mashed potatoes too and often have a salad and green beans along with it.

Father, help us to be like Christ your Son, who loved the world and died for our salvation. Inspire us by his love, guide us by his example

AROUND HOME
Just wanted you to know I have entered the snapdragon part of my life.
Part of me has snapped........... and the rest of me is draggin.....
Besides work Monday thru Friday there is not much on my calendar this week. Saturday is DS#4 and his wife’s anniversary so that is worth celebrating for sure.
Otherwise all is pretty quiet on the home front for sure!

I just love fork and knife sandwiches. They're the best! Congrats on your impending retirement. It dawned on me this morning. I am unemployed. It hadn't hit home until now. Hopefully I will find a job quickly once we get settled at the other end, and in the meantime, I will try to enjoy the blessing of having free days to do as I want. Those sandwiches sound so wonderful. We put the shredded leftovers in barbecue sauce and have them on buns.
Sadly, I don't think I've done so well with Lent this year, and I had really good intentions.
