It's FRIDAY!
This is one Friday I’m really glad to see. 2 days of training under my belt and I feel like I did at least 10 days hard work for sure! I am glad I’m not the trainee and am the trainer at this point for sure. Well after today I have 2 days to rest before I have to do more and I’m thinking that is a great idea.
The good Lord blessed us with another beautiful day. We got up to 65 yesterday and today I think we’ll have more of the same.
THINKING
I do know how I’d like to spend my time, but that is not always what I’m able to do.
Very often the plans I have disappear into thin air. I’ve found that living one day at a time is the better way to go.

NEW IN THE KITCHEN
Those hot dogs grilled outside are looking mighty good about now, but I no longer have a grill and can only enjoy them when I get to the campground. So you know today is Pizza Day at my house anyway and I do happen to have a frozen one in the freezer just waiting for me.
Maybe you’d like to try out this recipe that I found on line…
This pizza not only costs less than a take-out or delivery pizza, but you can control the ingredients, and load it up with as many toppings as you like
1 onion, chopped
2 Tbsp. olive oil
2 (8 oz.) cans tomato sauce
6 oz. can tomato paste
2 Tbsp. yellow mustard
1/2 tsp. garlic powder
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/2 tsp. salt
1/8 tsp. pepper
1/2 cup water
Thin Pizza Crust or 2 Boboli® pizza crusts
Pepperoni
Chopped green peppers
Canned mushrooms, drained
3 cups shredded Mozzarella cheese
Preheat oven to 400 degrees F. Cook onion in the olive oil until tender. Add tomato sauce, paste, mustard, seasonings and water. Cook, stirring frequently, over low heat until thickened and blended, about 10 minutes. Spread over the pizza crust and sprinkle toppings over. Sprinkle with cheese.
Bake at 400 degrees for 15-25 minutes until heated through, crust is crisp, and cheese is melted and beginning to brown. 8-10 servings

AROUND HOME
This weekend looks like it will be a busy one for me. Tomorrow is the ‘Party Hill Gang’ get together that DD and her hubby had planned in February but that got cancelled. I’ve got a nice dessert to make and am in charge of bringing everyone’s favorite chips too! In case you didn’t know…Party Hill is what they call the hill where our campers are located. So all those that camp around us have been invited to get together. I love all our neighbors there. Of course most of them are family and the ones that aren’t related are friends of family so it’s a great group of people.
DS#1 and his wife have also said they are taking me to lunch before the party as part of my birthday gift. I feel pretty special as I’ve been able to celebrate this birthday for several weeks now.
FAMILY
I did get a call from DS#6 the other evening and they are doing well. It sounds like our little ‘Lucky’ guy has his days and nights mixed up a bit but that will soon straighten itself out. It always does.
Having a new babe sure does change our life styles, but in a wonderful way!

Mmmmmm...Pizza day, one of my favorites but tonight I'm throwin' steaks on the grill. I make plans, they are good plans, then Hubby walks in the their out the window and I'm off chasin' wild eyed cows!

Henry Van Dyke's quote is so true! It's supposed to snow in our area on the first day of spring! Unbelievable here in the deep South! Today has been spring-like with temps in the 70's.
