ON THE BRIGHT SIDE
DECEMBER 18th, 2009
It's FINALLY FRIDAY…
I am pretty sure I’m finally done with all my Christmas Preparations. I got my packages in the mail to the babes out of state yesterday and was assured by the UPS folks that everything would arrive before Christmas. Most of my cards also went in the mail and I’ll send the rest today.
What a relief it is to have all that done.
Now all I have to do is bake my ham on Saturday morning and take everything over to DS#5’s and the celebration will begin! Then I’ll just relax and take it easy for awhile.
DS#1 and family asked if I’d like to come to their house at Christmas since I’ll be here alone, but as much as I’d enjoy being with them, I think I’ll just stay home and rest. I need it badly.
THINKING
Advent is the time of hope, a time to renew the light of Christ in our lives.
As He came to bring us the light of eternal life, we hope to share our light with others.
In my Advent devotional for today it says:
Look around you at work, at home, in your social life. Ask what is not yet the way it should be when Christ returns
O Antiphon for today:
O Adonai: O Sacred Lord of ancient Israel, who showed yourself to the burning bush, who gave him the holy law on Sinai mountain: come, stretch out your might hand to set us free.
Isaiah 4-5;33:22
NEW IN THE KITCHEN
Classic Holiday Meatballs
2 lb. lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 eggs
1 jar (12 oz.) grape jelly
1 bottle (12 oz.) chili sauce
HEAT oven to 400ºF.
LINE 2 (15x10x1-inch) pans with foil; spray with cooking spray. Mix meat, stuffing mix, water and eggs until blended. Shape into 50 (1-1/2-inch) meatballs; place in prepared pans.
BAKE 16 min. or until done (160ºF). Meanwhile, bring jelly and chili sauce to boil in large saucepan on medium heat, stirring occasionally.
ADD meatballs to sauce; stir to evenly coat.
Serving Suggestion
Meatballs in sauce can also be served in a slow cooker set to warm.
Note
If you don't have 2 (15x10x1-inch) pans, use any other shallow baking pans instead. Just make sure the meatballs are spread into a single layer in each pan.
How to Freeze Meatballs
Loosely pack cooled meatballs in freezer-weight resealable plastic bags. Lay bags flat in freezer so meatballs will freeze individually. Store in freezer up to 3 months. Thaw in refrigerator several hours or overnight before using as desired.
(I’m pretty sure that we’ll be having some of these come Saturday. I don’t know if they will be made from the same recipe or not, but I’m sure they will be good)
ATTIRE FOR TODAY
We’ll be in the upper 30’s today and mostly cloudy they say. There is no snow in the forecast till Saturday. Hopefully not much. I’ll be praying for safe travels for all.
PRAYERS
Father, thank you for the gift of faith. I don’t deserve to be your beloved child, but I’m grateful for my place in your family
Amen
Please pray for God's protection of
our troops and HIS wisdom for their
commanders.
Lord, hold our troops in
your loving hands.
Protect them as they protect us.
Bless them and their families for the
selfless acts they perform for us
in our time of need. I ask this in the
name of Jesus, our Lord and Savior.
GOD BLESS YOU ALL!
AROUND HOME
I got my Christmas present in the mail Thursday. The present I always give myself every year and that was the bill for the shingles we had to have replaced. It was something I needed and in this case I don’t mind spending money on myself at all.
Besides that every day is Christmas at my house. I pretty much do and get as I please. Thankfully my pleasures are never very expensive and I’m easy to please.

COUNTING THE DAYS
We wish you a Merry Christmas!
Every Christmas for more than 150 years, children have hung their stockings by the chimney with care and we can thank Clement Clarke Moore for the tradition.
Moore, a wealthy Manhattan biblical scholar, went down in history as the man who in 1823 created the American image of Santa Claus as author of the Account of a Visit from St. Nicholas. Better known as The Night Before Christmas, it became one of the most widely read poems in the world

Loved your post as usual Ma, all the pictures and ideas and thoughts. My mom always prefers to stay on her own at Christmas. She gets invited to lots of people's but just wants to stay home with her cat. Those are my favourite meatballs, although this is the first time I have read about using stuffing mix in them. I may have to give these a tasty try!!!
