ON THE BRIGHT SIDE
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a Special Occasion!
Hallmark
Today is National Pigs In A Blanket Day! This delicious finger food is popular with kids and party guests all across the world. In fact there are many different cultures that have their own unique twist on this classic comfort food.
In the UK pigs n a blanket are small sausages wrapped in bacon. People traditionally serve them as a Christmas dinner appetizer. In Israel, they enjoy Moshe Ba’Teiva, Moses in the Ark, which are miniature hot dogs rolled in a ketchup covered puff pastry and baked in the oven. In the US, pigs in the blanket are hot dogs or Vienna sausages wrapped in biscuit or croissant dough and baked until golden brown.
No matter where you are or how you decide to make them, celebrate today and make pigs in a blanket for dinner tonight and serve them with a side of ketchup!

THOUGHT FOR TODAY
If you are content, you have enough to live comfortably.
Plautus
Comfort foods are wonderful and hit the spot every time. Like those little pigs in a blanket, they are always good and will fit the bill with me no matter the occasion. I love to cook and like what I cook and you can tell it just by looking at me. Ha ! I made the ones below yesterday and they made for a delicious lunch.
Pigs In a Blanket
1 can refrigerated biscuits
8 tsp, ketchup
8 tsp mustard
8 hot dogs
Heat oven to 350 degrees. Lightly grease cookie sheet. Separate dough into 8 biscuits. Press or roll each to form 6 1/2 inch oval.
Spread each biscuit with 1 tsp. of ketchup and 1 tsp. of mustard. Place one hot dog in center of each biscuit. Roll dough around hot dog. Seal edges well. Place seam side down on greased cookie sheet.
Bake at 350 degrees for about 20 minutes or until golden brown.
At this point in my life, I’ve decided to do what makes me comfortable. Life is too short to be anything but happy. Thankfully I have no health issues that keep me from eating what I want to. Not everyone can say that and have restrictions on what they eat in order to be comfortable.
We can only do the best we can with what we’ve got. And sometimes we have to get comfortable with being uncomfortable.
Being comfortable is not all about food, it’s a way of life. For me it is being content with what I have and who I am. I love simple things like spending time with love ones, reading a good book, sipping a good cup of coffee. For me it’s easy to be comfortable and content.
After a beautiful Spring day yesterday we are supposed to see some rain come our way today, but then it’s still Spring so I’m happy. We need those showers in order to have the flowers.
Every day seems to be a little greener and it’s such a delight to see color where every thing seemed dark and gray before. Even the rainy days seem brighter.
I hope you all have a TERRIFIC Tuesday!

Pigs In A Blanket! I love them!
Contentment, love that from Von Goethe. x
I bet those pigs in a blanket were good! I've made the same for the kids growing up but used crescent rolls. Funny, when I think of pigs in the blanket I think of what my mom made when we were growing up. Some would call them cabbage rolls, but she called them pigs in the blanket. Ground beef mixture wrapped in cabbage leaves cooked in tomato soup. They were delicious; haven't had them in years. I think as we get older, we learn that contentment can be found in the very simple things of life, often things that don't cost a lot of money. Had fun watching the grandson play at the park the other day; especially because his dad was with him so he was chasing him around, I could just sit and watch what he did and people watch with the other kids that were around.

Betty's sure right about finding contentment in the simple things. Tom and I had a tradition of making pigs in a blanket (using Little Smokies) every Friday night with mustard and mayo dipping sauces. I suspect we quit because I got all "no carb"-righteous. (Silly!)
Coming back from running errands this morning, Tom pulled into the market because he's having a craving for hot dogs tonight. Now I'm going to look and see if we don't have crescent rolls!
My mom used to make us Weiner Rolls, which was hotdogs wrapped in pastry which she had spread with mustard. We LOVED them. They were a real treat! I think one of my favourite parts of Christmas dinner is the pigs in blankets, which was not something I had ever had prior to moving over here! Your pigs in blankets look really tasty! xoxo
