It's WEDNESDAY!
OVER THE HUMP DAY!
Right now they are saying it’s going to be blustery with a north wind coming at us so it’ll be colder today. It is Winds-day you know. I wanted sunshine, but that doesn’t count at all.
It just isn’t possible to get rid of any of those layers I wear quite yet.

NEW IN THE KITCHEN
Found this dessert in one of the catalogs I get in the mail
Oatmeal Cake
1/2 Cup (1 stick) butter or margarine
1 Cup regular (not quick cook or instant) oatmeal
1 1/2 Cups boiling water
1 Cup brown sugar
1 Cup granulated sugar
2 eggs
1 tsp. PURE VANILLA EXTRACT
11/2 Cups all-purpose flour
1 tsp. baking soda
1 tsp. CINNAMON
1/2 tsp. GROUND NUTMEG
1/4 tsp. salt
Frosting
1/4 Cup (1/2 stick) butter or margarine, melted
1 egg
11/2 Cups shredded coconut
1 Cup chopped pecans
1 Cup brown sugar
3 TB. milk
Preheat oven to 350°. Put the butter and oatmeal in a roomy mixing bowl. Add the boiling water and let stand for 20 minutes. Beat in the sugars, eggs and VANILLA. Mix in the remaining ingredients. Pour into a greased 9x13 pan and bake at 350° for 35 minutes. Then spread with frosting (below) and bake an additional 10-15 minutes until the frosting is brown and bubbling. Let cool for at least 30 minutes, then serve warm or cold.
Frosting: Mix all of the ingredients together well, and then carefully and quickly spread it over the hot cake. Continue baking as instructed above.
Prep. time: 30 minutes (20 minutes oatmeal resting in water time)
Baking time: 45-50 minutes
Serves: 18

AROUND HOME
Work is getting busier as more and more new jobs beginning to come in for Spring. That is ok with me as the days go by a little faster.
Evenings here at home remain about the same – quiet and busy too. I do try to get a little bit of something done every evening. I never did make it to the library last weekend so maybe I’ll stop on my way home from work today. I’ve got a few to return and want to see what’s new too.
FAMILY
I had a call from DS#6 yesterday evening and they are home! Everyone is doing just fine. He says if we are bringing a cake to make marble cake with chocolate frosting for Saturday…hint to DS#5.

Yes we have the same weather forcast Ma for the rest of the week here in England most parts,and it's proving to be true this very morning brrrrrrr it's a biting wind and very coooold too.Happy to read family are home and all are well.Lots of work will make the day go much quicker.I hate when I have worked up and not much to do, how the time drags on,then I have to seek work LOL!!I cannot sit for long.Have a great day safe journeys.I love the recipe anything with oats in goes down well with me.Hope you find a good new selection at the library and don't forget to put aside time to make that scrumcious Marble Cake Heeeeee.Take Care God Bless Kath xx

Your spring countdown is spiraling down but it sure doesn't feel like it. I had to don the coveralls to endure the cold wind outside to do my chores.
