ON THE BRIGHT SIDE
It's WEDNESDAY!
And HAPPY ST. PATRICK’S DAY!!!
It’s the day we all become Irish and celebrate!
This family does have a wee bit of the Irish in our blood as one of my ancestors came from Ireland. The family tree includes at least 7 nationalities and going back in time one of them was Irish.
I think one of the most wonderful things about our United States is the melding of so many different peoples and the countries they came from. It really is grand to think that our nation is one that people want to live in.
My dad, whose parents were Hungarian, used to often talk about growing up and he mentioned more than once how he grew up with so many different nationalities. When he was young there seemed to be a influx of people from other countries and his neighborhood was full of them.
Now we are 2nd and 3rd generations removed from those times but we still have emigrants coming to our country to seek a better life for themselves.
THINKING
The fact that I can plant a seed and it becomes a flower, share a bit of knowledge and it becomes another’s, smile at someone and receive a smile in return, are to me continual spiritual exercises

Today is Sandwich day and I’ve already told you about my favorite Irish Sandwich, the Rueben, so I went in search of what other kind of Irish sandwich there is and here is what I found.
Irish Corned Beef Sandwich Melt
2 1/2 tablespoons butter, softened, divided
1 large onion, sliced
2 cups cabbage coleslaw mix
1/4 cup mayonnaise
4 slices Irish soda bread (1/2-inch thick)
1 1/2 teaspoon stone-ground mustard
1/8 teaspoon dried thyme
8 ounces very thinly sliced corned beef
8 slices aged sharp cheddar cheese
Melt 1 tablespoon of the butter in large skillet over medium heat. Cook onion 3 to 5 minutes or until it just begins to brown. Add coleslaw; cook 2 to 3 minutes or until color turns bright green. Remove from heat; stir in mayonnaise.
Meanwhile, heat broiler. Broil bread 2 to 4 minutes or until toasted on both sides.
Combine remaining 1 1/2 tablespoons butter, mustard and thyme in small bowl; spread over 1 side of each bread slice. Top with coleslaw mixture, corned beef and cheese.
Broil 2 to 4 minutes or until sandwiches are hot and cheese is melted.
Now, do I make the soda bread or do I buy it?

AROUND HOME
Housework is something you do that nobody notices until you don't do it

I am the first to admit that house cleaning is not my forte. There are so many other things I enjoy doing. Life is too short to worry about having a spotless house. It isn’t the worst but certainly not the best either.
AR (After retirement) I have such a long list of things I want to do that if the good Lords permits, I’ll be busy forever. AR is something I’m so looking forward to.

When my family was growing up they all had chores to do each day. We had a list on the refrigerator and the jobs rotated from week to week. I can remember that there were certain jobs that no one liked to do.
Even the youngest had little things to do. They would set the silverware on the table or fold the napkins and place them by each plate.
As a result everyone knew how to do a little bit of everything by the time they left home. That was my aim. I wanted them to be able to live on their own and be comfortable about doing it. I sure did miss them and the extra help when they left home, but I felt good knowing they would be ok on their own.

Your countdown numbers are really getting smaller!! Spring is almost here and your retirement will be here before you know it! I really enjoy your Irish blessings and prayers!
Yes, I too think all kids should have chores and learn how to make it once they leave home.
The sandwich sounds good. I will have to try it.
