Looking at the calendar for this week there is nothing much but work for me. The good news is that after today there will be just 3 more Monday payrolls to endure. I can only hope the person I’ll be training is quick to pick up on things.
The weather this week is not going to be as nice as we had last week, but still the highs will be in the 40’s and that is normal for us this time of year. Last week’s temps were not normal but they did get rid of all that snow.

NEW IN THE KITCHEN
MONDAY IS LEFTOVERS DAY
CHICKEN QUESSADDILAS
1 ½ c finely diced chicken
1 10-oz can ROTEL Mexican Lime & Cilantro diced tomatoes
1/3 c cheddar cheese, grated
2 large flour tortillas
¼ tsp garlic powder
¼ tsp cumin (optional)
¼ tsp onion powder
Combined diced tomatoes and chicken in sauté pan. Add garlic & onion and slow cook until all liquid is evaporated.
Then add cumin and stir.
In a fry pan, toast one flour tortilla on one side only until golden brown. Remove this tortilla and put the second tortilla in the pan. Sprinkle tortilla in the pan with cheddar cheese and top with chicken/tomato mixture. Cover with first tortilla and let cheese melt. Remove from low heat and cut into pizza type wedges

AROUND HOME
Today is Buzzard's Day - This is the day that the turkey buzzards return to Hinckley, Ohio. Sponsor: Park Rangers, Hinckley, OHIO
We do have some seasonal celebrations going on here in Ohio. Buzzards are not as picturesque as the swallows of Capistrano but they are a sign that Spring is just about here.
I took a peak at the Farmer’s Almanac forecast for Spring and Summer this year. They say we’ll have a wetter than normal spring with stormy weather and we’ll have a hotter than usual Summer.
We’ll see. . .
FAMILY
I went to church with DD Saturday evening and then heard from DS#1 Sunday evening. I also heard from DS#2 and he only has 2 more weeks of travel till he gets a break at home and then he’ll be off again. It sounds as if DS#4 is also home for now. These two travel more than they are at home sometimes. I’m always praying for safe trips for them.

I always enjoy learning about your part of the world through your posts. Today I find the info about Buzzard Day interesting! I like your thoughts about change, too.
I've never seen a turkey buzzard, but I am thinking they are probably not a pretty sight. But then again, there is beauty to be found in all of God's creations so I am sure they have some redeeming qualities! Have a great week at work! xxoo
