Today is Halloween or All Hallows Eve. Halloween is a feast on the night before All Hallows on November 1st, which is where it got the name from. Halloween is mostly celebrated in Ireland and the USA where many of the customes of the night of witches, vampires and ghosts come from
Modern celebrations include spooky decorations with graven Halloween pumpkins and dressing up in creepy costumes. The pumpkins are lit by a candle and often called Jack O Lanterns, according to English legend aug a strange flickering light.
A typical Halloween pumpkin looks like a cruel or funny face or head, it glooms and is placed on the doorstep on Halloween and the days around Halloween. The popular trick or treat Halloween tradition has made its way from North American to Europe in more and more countries. Kids walk house go house in their costumes asking for treats, so they wouldn’t play tricks on the house owners.
One third of the of all the candy sold in the U.S. is purchased for Halloweena and there is typically over 40 million children who trick or treat in their neighborhoods each year. A quick and easy way to celebrate would be send a card to family and friends.

We’ve had our summer evenings, now for October eves.

i got the Halloween card; shown above from DDIL#1 and family this week and it was a nice surprise with a little coupon stuck inside to get a free frosty from Wendy’s . There isn’t any trick or treating going on here in my neighborhood, but city wide it’s supposed to still go on.
The rest of the pictures today are some of my Halloween decorations. But with all of the fun of Halloween tonight let’s not forget it’s also the night to set our clocks back one hour before we go to bed, because Tomorrow we Fall backwards one hour. Daylight savings time ends for us. yay! we gain the hour we lost last spring when we sprung ahead one hour. I really wish they’d just forget about it and leave the time alone. It takes me forever to try and adjust to the time change.
Today is my day to cook for the weekend and on the menu is;
Pepper Stuffed Pork Tenderloin
2 tbsp. oil
3 sweet red peppers, finely chopped
1 onion, finely chopped
2 celery ribs, chopped
1 1/2 tsp thyme
3/4 tsp salt
3/4 tsp paprika
1/2 tsp cayenne pepper
2.25 lb pork tenderloin
4 tsp. lemon pepper
4 tsp. crushed fennel seed
Preheat oven to 325 degrees. In large skillet, heat oil over medium high heat. Add red peppers, onion and celery, saute until tender. Add thyme, garlic salt and paprika and cayenne, cook minute more. Remove from heat and set aside .
Make a lengthwise slit down center of tenderloin to 1/2 inch of bottom. Open tenderloin so it lies flat. With a meat mallet flatten pork to 1/2 inch thickness. Fill with vegetables stuffing mixture. Close up tenderloin, tie at 2 inch intervals with kitchen string.securing ends with toothpicks.
Place on a rack in a shallow pan coated with baking spray. Combine lemon pepper and fennel rubbing over tenderloin.
Bake until a thermometer inserted in pork reads 140 degrees, 45 - 55 minutes. Remove from oven: let stand 5 minutes. Discard toothpicks and string. Cut into slices.
Makes about 8 servings
I’ll be making some gravy with the pan drippings and serving with some mashed potatoes and homemade apple sauce.
i didn’t have any fennel so omitted that from the seasonings today. it tastes like licorice and not a favorite of mine.

I'm going to DS#5;s for dinner tonight and should have pictures to show tomorrow!
No trick or treating going on in my neighborhood either but it's nothing new. We've never had any trick or treaters around here. I miss the fun back when I was a kid, such different times. Enjoy your dinner this evening and have a happy Halloween :)

What a thoughtful gesture on the part of your DDIL #1. Little things sure mean a lot! Your recipe sounds much like a favorite meal my mother used to make, only using strips of beef. Rolladen(sp?) I believe it's called.
