Today is World Teachers’ Day which was established in 1994 to honor and celebrate teachers and teaching organizations. Teachers have a large impact on children’s development and learning and are beloved members of society. They dedicate their lives to children and higher education, and they make the world a better place through a profession that gives back.
World Teachers’ Day was create by UNESCO to recognize the key role that teachers play in quality and accessibility of education worldwide. The organization sought to commend teachers for their hard work, and set precedent for excellent and well resourced educational programs.
Today is the day to recognize your amazing teachers for the hard work they do, it may be your child’s current teacher or your favorite teacher from years past. A quick and easy way to say thanks is with a Teacher Appreciation card. If you feeling extra thankful, you can even include a gift card from a brand they’ll love.
Today is also Apple Betty Day and World Habitat Day.

There are a lot of teachers in my family and I know how much work they do over and above the average school day. Most of them take classes every year to update their certification and spend many hours in preparation before school even begins. They spend a lot of hours after school too grading papers and preparing lesson plans for the next day.
They go above and beyond in many ways and I’m thankful for all the work they do for our children. Of course I always try to think that parents are a child’s first teacher and play a big part in how they do in school. We have taught them since they were born and what they learn from us before they even go to school is so important. Parents working with teachers is usually the best way to go.
Students that have parents who care at home always do better in school it seems. I spent many hours helping mine do homework. Practicing math flash cards and going over spelling words. The couple of hours after they got home from school until dinner time were usually spent at the dining room table doing homework.
These days many are involved in online classes which has added yet another job for our teachers and parents too. Some of mine do both online and in class teaching or learning. Not easy as most had to learn a new way of doing new things with computers.
On the menu at my house today is:
Linquine with Creamy Mushroom Sauce
8 oz. whole wheat linquine pasta
2 tbsp olive oil
6 cloves garlic, sliced
1 1/2 lb. mushrooms sliced
1 cup diced shallots
1 tbsp fresh thyme
1 cup apple juice
1/2 cup sour cream
1/4 cup Parmesan cheese, plus more for garnish
1 tbsp. butter
1/2 tsp salt
1/4 tsp ground black pepper
1 sprig fine chopped fresh parsley for garnish
Bring large pot of water to a boil over high heat. Cook pasta according to package directions. Reserve 1/2 cup of pasta water, then drain the pasta.
Meanwhile heat oil and garlic in large skillet over medium heat until fragrant, about 2 minutes. Add mushrooms, shallots and thyme and increase heat too high. Cook stirring occasionally, until the liquid the mushrooms release has evaporated and mushrooms start to brown. About 12 minutes.
Add apple juice to the pan and cook until it is reduced by about half. Stir in reserved pasta water, sour cream, parmesan, butter, salt and pepper. Add the pasta and toss to coat. Serve topped with more parmesan cheese and parsley if desired.
Serves 4
You can use white wine instead of apple juice, but I rarely have wine on hand so I go for the juice. Right now I have apple cider on hand so that’s what I’ll use.
We’re going to have another cool week here with temps in the 60’s but they say we may see a couple of days in the 70’s. Those will definitely be days for me to get out and get some needed exercise. I’ve been spending way too many days in the house. I prefer to be warm.
I got a big surprise yesterday when a package arrived from DS#2 and his wife. It sure did cheer up a gloomy rainy day. They sent me a new Kureig coffee maker since they read that my old one wasn’t working. So I’m back to being able to use my K cups and enjoying my one cup of hot coffee at a time.
I must say, it makes a better cup of coffee to enjoy. Thank you guys !
The pictures today are of some of the teachers in my family. Some are teachers, some are aides and one is a day care provider. All are parents.

Hurray for that surprise coffee maker! That's pretty thoughtful.
I don't know any teachers personally. Yet I think we all owe them our thanks for helping mold the next generation. I'll never forget what Christa McAuliff said, "I touch the future. I teach."

Teachers indeed do have it tougher this year with online learning. Our kids go back to in person learning October 19th. All cute pictures Ma!
