Today is Evaluate Your Life Day which is a time to to take an accounting, a reckoning of the things you’ve done, the progress you’ve made and the path we’re on. Maybe you’ll find you’re making the progress you wanted to and everything is moving smoothly, most likely it’ll wind up somewhere in between. Whatever the case, this day is a great opportunity to figure out where you are.

Celebrating the various parts of our lives, social, educational, financial, each piece broken down to find out where you are. For those less organized bent, getting away from it can be the perfect way to reevaluate your life, there are retreats to get away from it all, where you can be guided through a self evaluation process that will help you take a full and honest accounting of your life. These are great for those who can afford them, and the kind of professional guidance put your life back on track.
If that kind of thing is out of your price range, there is good news. You don’t have to spend a lot of money, Instead take a trip out to the country, into the woods away from it all and spend your time with nature. Sometimes all it takes if the quiet to understand your place in the world.

I think I’m satisfied with my life right now and have made the needed changes I had to for my health. I’ve come to an age that I’m content with myself and what I have and what I do. I may not have a lot, but I have what is needed and that is more than a lot of people have. So I’m thankful for it.
For my dinner tonight I have another new dish to try out
Autumn Glow Salad
1 Butternut squash peeled and cut into 1/2 inch cubes
1 tbsp. olive oil
1/2 tsp. salt
1/4 tsp pepper
1/2 cu dried green lentils
1/2 tsp cumin
1/2 tsp. red wine vinegar
2 cups argula
1 tbsp. parmesan cheese
2 tbsp. salad dressing
Preheat oven to 400 degrees. Place squash, oil , salt and pepper in a bowl to combine. Spread mixture on a foil lined baking sheet. Bake at 400 degrees for 28 to 30 minutes, tossing halfway through.
While squash is baking, place lentils in a medium saucepan. Cover with water to 3 inches above, bring to a boil. Reduce heat and simmer 20 minutes or until they are tender. Let stand 10 minutes.
Arrange arugula on a plate. Top with 1 cup squash, 1/2 cup cooked lentils . Drizzle with dressing over top.The original recipe called for Tahini Dressing and here is the recipe for that.
Serves 4 to 5
1/4 cup smooth tahini or greek yogurt
3 tbsp. water
2 tbsp. lemon juice
2 tbsp olive oil
1 tbsp. maple syrup
1 tsp. sesame oil
1 clove garlic, minced
1/4 tsp salt
Whisk together tahini, water, lemon juice, oil syrup, garlic and salt until smooth.If too thick add more water 1/2 tbsp at a time.
If you aren’t familiar with tahini, it’s a paste made from ground sesame seeds that originated in the middle east. It’s what makes hummus taste rich and velvety. You can substitute it with peanut butter or greek yogurt which will still give it a good texture, but a different flavor. I will be using the greek yogurt for mine. Making do with what I have.
The pictures today are of one of my granddaughters, our Angel, and her friends celebrating their senior prom 2020. They couldn’t have one like they would usually, but have made some fun for themselves.

Amen! Your 'Angel' is beautiful! So glad she and her friends took that proverbial lemon and made themselves lemonade.
