Today is National Pumpkin Day which honors the harbinger of the harvest season appearing every year as the first sign of Autumn. There are over 45 different varieties. They range in color from white, to red and even blue.
Pumpkins can be grown on every continent, excect Antartica, and the U.S. produces about 1.5 billion pounds of them each year. A Wisconsin farmer grew the largest pumpkin ever recorded. He used seaweed, cow manure and fish emulsion to grow his pumpkin, which weighed a total of 1, 819 pounds and was the size of a dumpster.
Celebrate today by carving a pumpkin in time for Halloween. Don’t forget to bake the pumpkin seeds for a healthy autumn snack!

Most of the pumpkins I have here at my house are the artificial kind and I won’’t be doing any carving this year, but thanks to my grandchildren there will be plenty of carving going in the family That’s what today’s pictures are of.
I love every thing pumpkin, all the wonderful pies and cakes and donuts and my pumpkin spice coffee. Pumpkins spice is one of my favorite spices and I use in a lot of things. But for today, I’m not cooking with pumpkin, but will be making
Fall Vegetable Sloppy Joes
8 bacon strips, cut into 1 inch pieces
2 lbs lean ground beef
1 onion, chopped
2 cloves garlic, minced
2 cups shredded, peeled butternut squash
2 parsnips, peeled and shredded
2 medium carrots, peeled and shredded
1 can cola
1 can 8 oz, tomato paste
1 cup water
1/3 cup honey mustard
1 1/2 tsp cumin
1 1/4 tbsp salt
1 tsp. allspice
18 whole wheat hamburger buns, split
In large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with slotted spoon, drain on paper towels. Discard drippings. In same skillet, cook beef, onion, and garlic over medium heat until beef is no longer pink and onion is tender. Breaking up beef into crumbles, drain.
Transfer to slow cooker. Stir in squash, parsnips, carrots, tomato poste, water , mustard and seasonings. Cook covered on low until vegetables are tender, 4 to 5 hours. Stir in bacon. Serve on buns.
For an even healthier meal you could use ground turkey instead of ground beef. But I went with the beef. I had all the vegetables on hand but the parsnips, so I omitted them and added 2 more carrots. It’s a good way for kids to eat their vegetables without even knowing they had them. This makes a recipe for a crowd so I think I’ll be cutting it in half and still have enough for lunch the rest of the week. You can also top the filling with a little shredded cheese before serving.
I’ll still be enjoying my pumpkin spice coffee, hot and very flavorful.

With Halloween almost here, it's time to work some pumpkin magic !
It's been years since I've carved a pumpkin! I can't believe we are only a few days away from Halloween!
Great pictures! No carving pumpkins -- real or otherwise -- here at Casa Guca. I would, however, love to find a plant holder like the one you've shown us. Was able to score some pumpkin cheesecake bites in the dairy case this morning; that might well be my supper. LOL!
Carving gives me happy memories. Just 5 years ago, I provided the pumpkins and yielded the knife. Now I smile and watch.
