Today is Columbus Day which honors Christopher Columbus who set sail in 1492 to find a shorter trade route to Asia. He traveled west and accidentally landed in the Americas, spawning the era of European exploration in the New World.
The first celebration of his discovery did not take place until October 12, 1792 — exactly 300 years after his landing. In 1937, President Roosevelt proclaimed Columbus Day a national holiday, observed each year on the second Monday of October.
To celebrate today take time to learn something new about Christopher Columbus and commemorate his voyage to the New World. Happy Columbus Day!

I do remember a time when we had the day off from school for Columbus Day and DD and I would often go shopping but somewhere along the line, they stopped doing that. I like to think that life is one big adventure and that there are new things to explore and learn about every day. We are explorers of life.
My tendencies to explore new places is now all about new recipes and things to eat. Since I have leftover pork roast from the weekend, on my menu for today is:
Pork and Cranberry Potpie
Makes 8 servings
2 cups cranberries
4 celery ribs, sliced
2 1/2 cups apple cider or juice
3 tbsp brown sugar
4 garlic cloves, minced
4 tsp grated orange zest
1 tbsp. beef or chicken bouillon granules
1 tsp. dried thyme
6 tbsp. all purpose flour
3/4 cup water
6 cups chopped cooked pork
4 sheets refrigerator pie crusts
Adjust oven rack to lower third of oven, preheat to 450 degrees. In a large saucepan, combine first 9 ingredients, bring to a boil. Reduce heat; simmer uncovered until berries pop, about 10 minutes.
In small bowl, mix flour and water until smooth, stir into cranberry mixture. Return to a boil, stirring constantly, until it thickens. Stir in pork and remove from heat.
On a work surface, unroll crusts. Roll until each is 14 inch circle. Using a 5 inch diameter disposable foil potpie pie and a guide, cut out 6. 6 inch crusts circles. Rerolling scrapes as necessary.
Press 1 crust firmly into bottom and up sides 8, 5 inch disposable foil pans Divide pork mixture evenly among pans. Please remaining crust circles over tops , pressing bottom and top crusts together firmly. flute edges. Cut slits in crusts.
Place potpies on baking sheets. Bake until crust is golden and filling is bubbly. 30 to 35 minutes.
I didn’t have 6 potpie pans so I opted to make 2- 8 inch pies instead. I can have one now and freeze the other for later on.
It turned out to be a beautiful fall day Sunday, no rain came our way but it has turned cooler so it’ll be a good day to have the oven on. Today we’ll see mid 70’s but the rest of the week is to be in the 60’s for the most part.

My prayer for the troops is dedicated today to a dear friends grandson who recently become a Marine..
Looks like your DD and family had a great time at the pumpkin patch! I'm searching pumpkin patches here to take the wee one and his sister to later this month. I am off today from work because of Columbus Day, so enjoyed a 3 day weekend. Schools are off for the whole week for fall break :)

Yep, I remember schools being closed for Columbus Day. Like a few other holidays from my youth, recognition for Columbus Day seems to have waned. :(
Great photos, and what a great idea to have a growth chart! Whenever I'd visit, my grandmother would make me stand against her kitchen wall and she'd mark my height and the date. Always fun to go back and see the difference. The old farmhouse has since been demolished, but I wish someone had thought to take a picture of that wall.
You know what? I went to town today to mail a package and did not realize it was Columbus Day. Sometimes the days and weeks all blend together and we lose track of our days. Louis Dean more so than I. He often asks me, "Now what day is this??"
Loved the photos from the Pumpkin Farm. Next year we hope to grow them here in our garden at the ranch. Still have cantaloup and watermelons growing right now. It's crazy!!
The goats all escaped their pen this evening and it's a good thing we have the fence up or they would have been eating at the fruit bar!!
