ON THE BRIGHT SIDE
FOR WEDNESDAY, OCTOBER 14TH, 2020
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a special occasion!!

Today is National Dessert Day which is the perfect day to satisfy your sweet tooth.
Although desserts are typically enjoyed after a meal, they can and should be enjoyed at any time. The term dessert was first used in the mid 1500’s in France and originates from the word desservir, which means to remove what has been served.
Desserts grew in popularity after the advent of international sugar trading, Once sugar arrived in Europe in the 12th century , more desserts are slowly introduced. The first written apple pie recipe can be traced to England in 1381. The Industrial Revolution also furthered the popularity of desserts as mass production introduced new processing, preservation and packing methods
Whether it’s cookies, pie, or cupcakes be sure to treat yourself to something special today to celebrate !
If you can’t see the bright side, polish the dull side
THOUGHT FOR TODAY
One of the most important courses in any meal is the dessert. And like the final act in a good play , is long remembered with pleasure.
Duncan Hines
I do have a sweet tooth and desserts are my downfall, So I try not to keep them in the house anymore, I do however, splurge once a week and enjoy one. I figure once a week is better than every day and I deserve a reward for all the healthy eating I’m doing.
When my family was at home, we always had dessert after supper. But long gone are those days. These days it’s only me and I cannot eat it all.
On the menu for today is:
Creamy Chicken and Rice Soup.
4 Tbsp. butter
2 cup diced carrots
1 cup diced celery
3 clover garlic, minced
1/4 c. flour
2 cup milk
4 c. broth
2 c. water
Leftover chicken
2 cups brown rice
1 bay leaf
3/4 cup frozen peas
salt and pepper to taste
Melt butter in large pot. Add onions, carrots, celery and garlic; cook until tender
Stir in flour and cook a couple of minutes. Whisk in milk and broth and bring to a boil.
Add rice, chicken and bayleaf and simmer 20 minutes
Add peas the last 5 minutes
Taste and adjust seasonings
I also managed to get a menu together for next week and here it is. It’s what helps me to make my grocery list for the week.
Autumn Glow Salad
Creamy pulled chicken Sandwiches in the Crockpot
Squash and Spinach Lasagne
Light Chicken parmesan
Loaded Sweet Potatoes
Pork Chops with Balsamic Braised Cabbage and apples
It’s going to be cooler the rest of this week so it’s a good time to enjoy hot soup. I didn’t have any leftover chicken so I cooked some chicken breasts with the vegetables and then shredded them up.
Chicken soup is good for the body and the soul. It’s what makes us feel good. Mothers throughout history have turned to chicken soup to help everything from the sniffles to a broken heart. Its the ultimate healthy comfort food and so easy to make at home.
The pictures today are from the Just Desserts party I had last year for my family and friends.
I hope you all have a WONDERFUL Wednesday!

ADVICE FOR TODAY
My advice to you is not to inquire why or whither, but just enjoy your ice cream while it’s on you plate - that’s my philosophy

I hope you enjoy your dessert today !It's the happy ever after to any meal
All those desserts look delicious! Your soup for today sounds good too. I just made a batch of Rice Krispie treats, that will be our dessert to celebrate the day :)
I don't have much of a sweet tooth and just one bite can fully satisfy me but I surely have a salt tooth and will fight you to the death for the bag of popcorn lol.
Those goodies look so tempting! Aside from Tom's Eskimo ice cream sandwiches and an occasional dip into the JIF jar, we try not to keep sweets at the ready. Monday morning one of the ladies at Bible study brought in the last of her birthday (carrot) cake -- with double icing. Wow, it was all I could do not to get up and lick the plate.
I do remember your Just Desserts party from last year! I can't wait to see the recipe for the creamy chicken pulled sandwiches. That sounds yummy! The chicken rice soup sounds good too! I like desserts every now and then but have to continue watching that weight LOL.
betty
I want cooler weather and hot soup! Still warm to hot in Texas and our AC is on here in the camper tonight. I love your meal plan. I wonder what I would eat if it was just me. Crackers and milk? Peanut butter sandwiches? I hope I will be like you and eat a healthy diet of well planned meals. I am more of a salty person. Not given to a lot of sweets. But knowing how much you love donuts, every time Dean and Sherry bring us some - I think of you and how much you would enjoy one.
