Today is National Pumpkin Cheesecake Day which honors the festive pumpkin flavored treats that are everywhere.You can find all sorts of goodies like pumpkin ice cream, pumpkin pancakes, pumpkin soup, pumpkin beer, pumpkin coffee, pumpkin bread, muffins and cookies and today’s reason to celebrate pumpkin cheesecake.
Pumpkin cheesecake is traditionally made with a graham cracker crust and a pumpkin puree cheesecake filling. Cheesecakes were popular in Greece as early as 2000 BC. Today there are hundreds of variations all over the world.
To celebrate today, support your local bakery and order a pumpkin cheesecake and pay homage to a fall favorite and enjoy a delicious slice.in honor of the day!

There is no doubt in my mind that I would enjoy a piece of cheesecake today but on my menu for today I’ll be cooking up a nice dinner instead of dessert.
Squash and Spinach Lasagna
2 tsp. oil
1 1/2 cups vertically sliced red onion
1 1/2 tbsp. garlic
1 6 oz pkg baby spinach
3/4 cup plain Greek yogurt
1/3 cup milk
3 oz. sliced provolone cheese, torn into small pieces
1 1./2 tbsp. flour
1 tsp. salt
2 large eggs
1 butternut squash
Cooking spray
1 cup ricotta cheese
1/3 cup grated parmesan cheese
Preheat oven 350 degrees. Heat oil in large skillet over medium high. Add onion and garlic. Saute 4 minutes. Add spinach, saute until wilted. Remove from heat. Place yogurt, milk and provolone in a blender, Add flour, salt and eggs, blend 1 minute.
Peel th squash and cut into 24 1/8 inch thick slices. from the neck down. Place slices in an 8 inch square baking dish, Cover with plastic wrap. Microwave squash slices until they are almost tender.About 4 minutes. Remove squash from dish. Coat dish with cooking spray and spread 1/2 cup yogurt mixture in bottom of dish.
Shingle one third of squash over yogurt mixture. Top with one third of ricotta cheese, one third spinach mixture, and one third remaining yogurt mixture. Repeat procedure twice. ending with yogurt mixture.

Sprinkle lasagna with Paremsan cheese. Cover dish with foil and bake at 350 for 50 minutes. Remove from oven. Turn on broiler with rack about 8 inches from top. Remove foil from dish, broil 4 minutes until lightly browned.
Remove from oven , loosely cover and let stand 20 minutes. Cut into 6 rectangles.
Serves 6
We had rain again yesterday and temps have held steady in the 50’s and today we’ll probably see more rain but may get up in the mid 60’s. It’s been wonderful weather to turn the oven on.
Even with that I’ve had to keep my layers on. Nothing better than a sweater to keep the chill off. A coat and boots will also be added to the mix as it’s my day to get out and shop. I did make up a menu for next week so I could make up the list and here it is:

I've never tried making butternut squash, but it's been weighing really heavy on my mind. The only pumpkin cheesecake (my favorite!) I've ever had is Cheesecake Factory, but that's nearly a two-hour drive. Better I do like you've written and check out the local bakeries.
I've never had pumpkin cheesecake but I bet it is delicious! Your recipe for tonight's dinner and your menu for the week ahead sound so yummy! I'm getting such great dinner ideas from what you are posting here Ma!
