ON THE BRIGHT SIDE
WEDNESDAY,JANUARY 5TH, 2022
The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is Today is National Bird Day which celebrates the study of birds which has been a popular pastime ever since the Victorian Era, and the term bird watching first appeared in the title of a book in 1901. Millions of people across the globe consider themselves bird watchers. This is defined as anyone who has traveled for the primary purpose of observing birds or has closely observed and identified birds around the home.
Since the late 19th century, birds are among the most popular animals in the exotic pet trade and most birds in captive breading programs are kept there solely for commercial gain.
In an attempt to put an end to bird captivity, every year Born Free USA, the Animal Protection Institute and the Avian Welfare Coalition team up in support of National Bird Day. Today, bird enthusiasts and activists around the United States are asked to take action on behalf of captive birds.

THOUGHT FOR TODAY
My heart is like a singing bird.
Christina Rossetti
I love watching the birds here at my house and have the perfect place to do so. I don’t get many varieties, but then I don’t feed them either. I stopped doing that because the bird seed also attracts other animals that I don’t want. The big tree outside my sun room does produce acorns though and there are birds that feed on them.
There are nests in the trees and I can hear the birds singing in the Spring. I particularly love the robins in the Spring. They were a favorite of my mom and always remind me of her. She said they always seem to be saying, Cheer up, Cheer up, to her.
I am already dreaming of Spring time and looking forward to the return of the birds that leave for the winter time.
Some fly thousands of miles south in order to survive the cold of our northern winters.
We’ve been some warmer and in the 30’s but they say we're to return to the 20’s for Thursday and Friday and then warm up to the 30’s and 40’s for the weekend.
With the cold weather in mind I’ve tried to make my menu for the coming week full of comfort foods.
The menu for the week ahead is:
Monday - Makeover Tater Topped Casserole
Wednesday - Healthy Chicken Dumpling Soup
Friday - Delightful Tuna Casserole
Weekend - Chicken Parmesan Casserole
On the menu for today is:
Chicken Pesto Meatballs
Makes 4 servings
6 ounces uncooked whole grain spaghetti
2 Tbsp. dry bread crumbs
2 Tbsp. prepared pesto
2 Tbsp. grated Parmesan Cheese
1 tsp garlic powder
1 pound lean ground chicken
1 1/2 cups marinara sauce
1/4 cup water
Optional fresh basil and additional Paremesan cheese
Cook spaghetti according to package directions, drain.
In a large bowl, combine bread crumbs, pesto, cheese and garlic powder. Add chicken and mix lightly but thoroughly. Shape into balls
In a large skillet brown meatballs over medium heat, turning occassionally. Add sauce and water bring to a boil. Reduce heat, simmer, covered until meatballs are cooked through.
Serve with spaghetti , if desired top with basil and additional cheese.
Ground chicken makes these meatballs healthier and it is very tasty too. The suggested serving size is 3/4 cup meatball mixture and 1 cup spaghetti.
I hope you all have a WONDERFUL Wednesday!!

Hold fast to dreams, for if dreams die, life is a broken winged bird that cannot fly.

Bird watching is easy and inexpensive entertainment !
I don't think my husband considers himself a bird enthusiast, per se ... but man, he gets hours of enjoyment watching the cardinals enjoying the feeders. Our DIL even gave him a box full of seed!
Your little ceramic bird is so sweet, love the setting with the radio.
