Today is Martin Luther King Jr. Day which celebrates the life and legacy of the Reverend Dr. Martin Luthwe King, Jr. who devoted his life to the pursuit of justice and equality for all. We honor is memory today and share our thoughts on this day.
President Ronald Reagan signed the King Holliday Bill into law on November 2, 1983. fifteen years after the assicignation of the civil rights leader. A congressman from Michigan introduced the legislation just a few months after Dr. Kings’s dearth in 1968, but it took years of petitions, polotics and personal appeals from Coretta Scott King to get it passed.
Martin Luther King Day is celebrated every year on the third Monday in January . There are only two other federal holidays that honor individuals - Washington's Birthday also known as Presidents’ Day and Columbus Day.
Today take a moment to honor Dr. Kings work and reflect on his dream for America. You could also participate in the national of service and volunteer today.

I’m proud to say I’m celebrating today by honoring a great man and his dream. He believed in justice and equality for all. It deesn’t matter what color we are, we are all loved by God. We were all created equally and with love.
I was taught that I am no better than anyone else. And nobody is is better than me. We are equals.
We should always treat others as we would like to be treated. It’s the Golden Law.
Monday’s are my day to cook up something new for the week and on the menu today is:
Ground Beef and Potatoes Skillet
makes 6 servings
3 Tbsp. olive oil, divided
1 lb. lean ground beef
2 tsp. ground cumin
3/4 tsp salt
1/4 tsp ground pepper
3 potatoes, diced
1 onion, chopped
1 yellow bell pepper, diced
2 cloves garlic, minced
1 bunch spinach, stemmed and rough chopped
2 plum tomatoes, cored and diced
Heat 1 Tbsp. oil in large cast iron skillet over medium high heat. Add beef, cumin, salt and pepper; cook stirring often to break up meat until evenly browned. Using a slotted spoon transfer beef to a paper towel lined plate. In same pan add 1 Tbsp. oil to the drippings in the pan. Add potatoes; cook, stirring occassionally until potatoes begin to brown and are tender. Transfer potatoes to plate with beef.
Heat remaining Tbsp. oil in the slillet over medium heat. Add onion, bell pepper and cook stirring occasional until tender. Add garlic; cook stirring until aromatic. Add spinach and tomatoes and cook stirring frequently until spinach is wilted. Stir in beef and potatoes. Sprinkle with scallions if desired.
Serving size is 1 1/3 cup. This is a quick and nutritious week night meal.
