It can be a good time to carve out some time to spend together, making sure to let your spouse know just how much you appreciate them.
Whether you’ve been together for decades or if you’ve only been together a few years, cherish the the soulmate in your life.
To celebrate today, surprise your other half with a romantic dinner for two and let them know how much you appreciate them.

While I’ve been a widow for over 20 years now I’m thankful to say I did find my soulmate and that he was a wonderful loving husband a kind father to our children. I think it’s important to have some couple time when you are married, especially when you have a large family.
My husband and I didn’t have a lot of money and we had a large family to support, so there wasn’t a lot of money for going out to movies or dinners on the town. However, we managed to find a good way to have time together and not have to pay for a dinner out. Our church rented their hall out and served dinners for wedding receptions and special occasions. We decided to start volunteering to serve these dinners and always got a wonderful dinner for ourselves too. They say where there is a will, there is a way and we found ours.
Thankfully, we had a good baby sitter that took care of the kids and she didn’t cost a lot either.
To this day I will treasure the memories I have of my spouse and will never forget them either.

Well it’s Wednesday and time I made up a new menu so I can make up my shopping list for this week. I usually shop on Wednesday for the week ahead and on the menu this week is:
Monday- Cold Day Chicken Noodle Soup
Wednesday -Honey Chicken Stir Fry
Friday - Light and Lemony Scampi
Weekend -Sunday Boiled Dinner
On the menu for today is:
Pineapple BBQ Chicken Foil Packets in Oven
4 skinless, boneless chicken breasts
2 cups pineapple chunks
1 red bell pepper, diced
1 green bell pepper, diced
salt and pepper to taste
for the sauce:
1/2 cup of your favorite prepared BBQ sauce
3 cloves garlic, minced
1 1/2 tsp. paprika
2 Tbsp. olive il
2 Tbsp. lemon juice
1 tsp dried oregano
Chopped cilantro, to taste
To make baked chicken foil packets: Preheat oven to 350 degrees. Lay four squares of foil out on work surface. Place pineapple chunks , and bell peppers in the middle of each one. Season with salt and pepper. then top with a chicken brest. Season chicken with salt and pepper.
In a bowl, combine BBQ sauce, olive oil, paprika, garlic, lemon juice, oregano, and cilantro. Divide the sauce over each chicken pack and sprinkle with additional chopped cilantro.
Fold the foll over the chicken and vegetables to close off the pack, pinch the ends together so the pack stays closed.
Transfer packets to a baking sheet and bake for about 40 minutes or until chicken is cooked through and vegetables are tender. When the chicken is done, carefully open packs , drizzle with more sauce and broil for about a minute to crisp up the chicken.
Cooking time will vary on the size and thickness of your chicken breasts. If your chicken breasts are too thick, just cut them lengthwise to make filets. they will cook faster. Make sure to spray your foil with cooking spray so the chicken will not stick to the foil.
Since it’s so cold out today,a high of 15 degrees, I’ve decided to wait until tomorrow to do my shopping. It’s supposed to be mid 20’s tomorrow.

What a beautiful bride you made! Pretty ingenious solution, having volunteered in exchange for a nice meal and an evening out!
We're still not risking going out to eat, but Tom's volunteered to grill steaks today. I think this is the first time he's felt up to it since October!
