Today is National Blueberry Pancake Day which are wonderful treat to enjoy anytime of the day. They are nutritious enough to eat for breakfast, tasty enough for a mid day snack and easy enough to make for dinner..
To make blueberry pancakes, mix up your favorite pancake batter. Wash the blueberries , pat them dry, and keep them in a separate bowl. Once you’ve poured the batter onto the griddle, drop a few blueberries on top. This will ensure that your blueberries aren’t bruised during the cooking process and will be perfect bursts of flavor when you bite into your pancake.
To celebrate today, make a batch of pancakes, top them with a little blueberry syrup and enjoy !

I happen to have some blueberry syrup in the cupboard so this is a holiday I can celebrate. I don’t have blueberries, but I do love them and they are so good for us too.
It’s Friday and my day to cook something new and on my menu for today is:
Baked Honey Garlic Salmon
Makes 4 servings
2 Tbsp. soy sauce
2 Tbsp. lime juice
1 Tbsp. honey
1 Tbsp. toasted sesame oil
1 clove garlic, minced
2 1/4 lbs. center cut salmon fillet, skin removed and cut into 4 portions
1/4 tsp salt
1 Tbsp. chopped cilantro
Stir soy sauce, lime juice, honey, sesame oil and garlic together. Place salmon pieces and 3 tbsp. of the say sauce mixture in a large sealable bag. Reserve the remaining mixture for sauce. Marinate the salmon in the refrigerator for 20 minutes, turning frequently.
Preheat broiler to high and position rack in the upper third of the oven. Line a large rimmed baking sheet with foil and coat with cooking spray. Remove the salmon from the bag and transfer to the prepared baking sheet.
Drizzle any remaining marinade from the bag over the salmon and sprinkle with salt. Broil the salmon just until cooked through, 5 to 8 minutes, depending on thickness. Sprinkle with cilantro and serve with the reserved soy sauce mixture.
You know when the salmon is done when it flakes easily with a fork.

ADVICE FOR TODAY
In the winter I always buy frozen organic berries instead of fresh. They are frozen as soon as they’re harvested, so they actually have a higher vitamin count than fresh this time of year.

Pancakes are good anytime of day: breakfast, lunch and dinner, especially with blueberries in them!
I loved when my parents took me to a pancake house in Santa Fe. I don't think they had specialty 'cakes'; rather, 6-7 bottles of different kinds of syrup. I'd use a little of each -- what a mess. LOL!
While I adore salmon, I've never tried making my own. 'Always afraid of undercooking it, I suppose.
