Today is National Peanut Butter Day which celebrates one of the most popular household foods in the country. The average person consumes more than six pounds of peanut products each year.
Peanut Butter was invented by George Bayle, a St. Louis snack food maker, during the 1890’s . For many years, peanut butter manufacturers struggled with the oil separating from the grainy solids of the peanut butter. In 1923 Heinz became the first company to homogenize the peanuts into the spreadable butter we know and love today. After perfecting the recipe, peanut soon became a classic American food.
It takes 550 peanuts to make a 12 ounce jar of peanut butter. Peanuts are cholesterol free and an excellent source of protein. In fact the high protein content that causes peanut butter to stick to the roof of your mouth.
To celebrate today, bake some peanut butter cookies, spread some tasty peanut butter on toast, or enjoy a spoonful right out of the jar !

I love peanut butter and often have it for a snack or in a sandwich with jelly. I love to dip my apples, celery and carrot sticks in it too. And I make little sandwich Ritz crackers with peanut butter in the middle. It’s good and good for us too.
There are some that allergic to peanut butter and we have to watch out for them, but in my case, I have no known allergies.
It’s my day to cook up something new for the week and on the menu today is:
20 Minute Healthy Sausage and Veggies One Pot
2 cups baby potatoes, rinsed and quartered
1/2 red bell pepper, sliced
1/2 yellow bell pepper, diced
1/2 green bell pepper sliced
1 zucchini, halved and sliced
1/2 onion, sliced
9 oz. smoked sausage sliced, not ground sausage
2 Tbsp. olive oil
1/4 tsp red pepper flakes, optional
1/2 tsp garlic powder or minced garlic
1 Tbsp. Italian seasoning
1/2 cup chicken broth
Sald and pepper to taste
Fresh parsley, chopped
In a heavy bottomed pot, like cast iron, heat 2 Tbsp. olive oil over medium high heat. Add baby potatoes to the pot and season with salt and pepper. Fry until golden brown and cooked through, stirring a few times. Remove from pot and set aside.
In same pot, brown the sliced sausage in 1 Tbsp of olive oil over medium high heat. Remove the sausage from the pot and set aside.
Add onion and garlic and cook 2 minutes with remaining oil. Add bell peppers and zucchini in the same pot and season with red pepper flakes, italian seasoning, salt and pepper. Cook until softened.
Add the cooked sausage and potatoes back to the pot and mix all together. Add chicken broth and cook 5 minutes. Adjust seasoning and garish with fresh parsley to serve.
My DDIL#2 messaged me yesterday to let me know my son has covid. He tested positive and now is guaranteened in the bedroom. Please join me in prayer today that he only has a mild case. He was fully vaccinated so we’re hoping for the best.

This is one 'holiday' I'll be observing! 💛 That's a neat trick, making 'sandwiches' with the Ritz crackers. Another yummy recipe you've got there; one of our favorites is a medley of peppers, onions and sausage in the Instant Pot. I hadn't thought about adding baby potatoes; Tom would enjoy those.
