Today is National Popcorn Day which celebrates a popular and common household snack. Americans eat about 16 billion quarts of popcorn each year. This equates to about 51 quarts per person which makes it one of the most popular snacks in the country.
Popcorn has been around for centuries and is one of the oldest snacks in the country. It is one of six varieties of corn. The others are pod, sweet, flour, dent and flint. Popcorn originated in Mexico, but eventually made its way to the United Sates in 1948. Archeologists in the state of New Mexico discovered popcorn ears that were at least 5,600 years old. The native Americans in both North and South America popped their own by by throwing it on hot stones over a fire.
To celebrate today, make your favorite kind of popcorn and enjoy it while watching a movie at home.

For me, movies and popcorn seem to go together, I can't help but want some popcorn while watching a movie. It is definitely one of my favorite snacks. Mostly I make my own in a pan over the stove and I love using the Boy Scout popcorn that comes in a tub. It pops every kernel all the time. That is what is shown in my first picture today. But I also keep the microwaveable kind on hand . Right now I have bags of Pop Secret’s Movie Lovers with butter here on the shelf.
I do love to snack and it’s one of the healthier choices I can make.
It’s mid week and my day to cook and to also make up a list for groceries so I can shop from my menu for next week.
On the menu for next week is:
Monday - 20 Minute Healthy Sausage and Veggies One Pot
Wednesday - Pineapple BBQ Chicken Foil Packets in Oven
Friday - Baked Honey Garlic Salmon
Weekend - 15 Minute Garlic Butter Chicken with Paremesan Cauliflower Rice
I usually only cook every other day and eat leftovers in between.
On the menu for today is:
Slow Cooker Mediterraneanean Diet Stew
Makes 6 servings
2 cans fire roasted diced tomatoes
3 cans vegetable broth
1 cup onion, chopped
3/4 cup chopped carrots
4 cloves garlic, minced
1 tsp. dried oregano
3/4 tsp, salt
1/2 tsp. crushed red pepper
1/4 tsp ground pepper
1 can white beans,rinsed and divided
8 cups spinach, chapped
1 Tbsp lemon juice
3 Tbsp olive oil
Fresh basil leaves, torn if large
6 lemon wedges, optional
Combine tomatoes, broth, onion, carrot, garlic, oregano, salt and pepper in a slow cooker. Cover and cook on low for 6 hours.
Measure 1/4 cup of the cooking liquid in the slow cooker. Add 2 Tbsp. beans; mash with fork until smooth
Add mashed beans, spinach, lemon juice and remaining whole beans to the mixture in the slow cooker. Stir to combine and cook until the spinach is tender. About 30 minutes longer.
Ladle the stew into 6 bowls; drizzle with oil. Garnish with lemon wedges if desired.
I used regular diced tomatoes in mine. You could also use chick peas instead of white beans and use kale instead of spinach if desired. I prefer it with white beans and spinach. I’ll be having some warm corn bread to go with my stew.
The doctor appointment yesterday was discouraging. My low kidney function is getting worse. But on the Bright Side, he told me not to worry. He thinks it has to do with my blood pressure medication and says he can change that. I’ll having a follow up appointment in 6 weeks and go for another round of lab work before that.
The weather is to be above freezing today so it’s a good day to get out shopping. But the forecast says the week ahead is to be in the deep freeze again. Brrchill! Take good care everyone and keep warm.
