Today is Hot Tea Day which celebrates the second most consumed beverage in the world, after water.
Tea has been in our cups since as far back as the 2nd century B.C. Originating in China, tea is a delicious blend of spices which energizes, detoxifies, relaxes, and does so much more.
During the Tang Dynasty, legend has it that some tea leaves fell into a pot of water that was being boiled for the Chinese emperor Shen Nung. He drank the brew and found it delicious and relaxing.
In 2016 the earliest know physical evidence of tea was discovered in the mausoleum of Emperor Jing of Han in Xi’an, indicating that tea from the genus Camellia was drunk by Han Dynasty. The record of tea cultivation is also dated to this period, during which tea was cultivated on Meng Mountain.
Tea was first introduced to Western priests and merchants in China during the 16th century.The first recorded shipment of tea by a European nation was in 1607 was sold in a coffee house in London in 1657, Samuel Pepys tasted tea in 1660 and Catherine of Braganza took the tea drinking habit to the English court when she married Charles II in 1662.
Tea smuggling during the 18th century made tea accessible to the public. The British government removed the tax on tea, thereby elimination the smuggling trade, in 1785. The popular role of tea played a party in historical events — the Tea Act of 1773 provoked the Boston Tea Party that escalated into the American Revolution. By the late 19th century, tea had become an everyday beverage for every social society.
The National Tea Council of the USA was founded in 1950 and National Hot Tea Day was created in 2006.

While I’m mainly a coffee lover, I do like hot tea on occasion too. In the winter if I feel stuffed up from a cold, I like to sip on a cup of hot tea with lemon and honey mixed in. It makes your throat feel better too and clears up a stuffy nose.
It’s also good for an upset stomach. When I was young my mom always served tea along with a poached egg on toast when we were recovering from the flu.
I mostly drink my tea cold with ice in the summer time, it is very refreshing. I make a pitcher of it to keep in the fridge so it is easily accessible.
Although it’s hard to believe its another Wednesday and my day to make up my shopping list and menu for the coming week.

Thankfully it is to be warmer today and above freezing so it won’t be too bad to go out shopping And we may see some sunshine too.
On the Menu for today is:
Healthy Chicken Dumping Soup
makes 4 servings
1 lb boneless skinless chicken breast cut into 1 1/2 inch cubes
3 cans, 14.5 oz. each, chicken broth
3 cups water
4 medium carrots, chopped
1 onion, chopped
1 tsp. minced fresh parsley
1/2 tsp salt
For dumplings:
3 egg whites
1/2 cup cottage cheese
2 tbsp. water
1/4 tsp salt
1 cup flour
In a Dutch oven coated with cooking spray cook chicken until no longer pink. Add broth, water vegetables and seasonings. Bring to a boil. Reduce heat and simmer, uncovered, 30 minutes until vegetables are tender.
Meanwhile make dumplings in a large bowl. Beat the egg whites and cottage cheese until blended. Add water and salt. Stir in flour and mix well.
Bring soup to a boil. Drop dumplings by Tablespoonsful into the boiling soup Reduce heat, cover and simmer for 15 minutes or until a toothpick insisted in a dumpling comes out clean. Do not lift cover while simmering.
I always try to stay away from salt so only used half the recommended salt. It can cause high blood pressure. Many times I’ll just use Mrs. Dash instead.
I also will be adding a couple of stalks of celery in my soup as I like the flavor it gives. It may be warmer but mid 30’s is still plenty cold enough to enjoy hot soup.

I love a good cup of Earl Grey hot tea! ANd I drink a pitcher of ice tea hust about every day year round.

Whenever I feel I'm coming down with a cold, I reach for the Yogi 'throat comfort' teabags ... but other than that, I'm not much of a hot tea person. I love the ritual, but haven't found anything that compares to coffee.
Your weekly menu sounds interesting ... I'm waiting to hear more about the Mediterranean stew.
