Today is also Freethinkers day which is also known as Thomas Paine Day. We celebrate the life and work of Thomas Paine who was born this day in 1737. Paine came to America in 1774 at the request of Benjamin Franklin. Throughout his life he wrote many influential books and pamphlets including the Age of Reason, The Rights of Man, and Common Sense. Each of these works brought public attention to key issues and helped establish the philosophical foundation for the American Revolution.
His writing inspired many people to strive for political , economic and social advancement. He was also one of the first people to call for Universal Rights and an end to slavery.
This day has been celebrated since the 1990’s . Its purpose is to educate people about his work and the importance of freethinking and freedom. To celebrate, read a copy of Common Sense and take a moment to appreciate your civil liberties.

This grandson’s birthday is another of my many long distance celebrations as he doesn't live close by. I’ll be sending out a birthday card soon with lots of love and wishes for a Happy Birthday!
I’m a firm believer in using our Common Sense. It’s sometimes better than all the book learning we could get. Just because we know a lot doesn’t mean we are necessarily wise in our way of thinking.
It only makes sense to me that we should all have equal rights. After all we were all created equally by God. We are no better than others, and they are no better than us. We are equals.
On the bright side today, even though we remain in the deep freeze we are not going to have the terrible weather the east coast is supposed to get. They’ll be having blizzard like conditions.
I lived through the blizzard of 78 and hope I never see another. Talk about lock downs, we were unable to go anyplace for days. The roads were blocked with heavy snow and ice and no one could go out.
Here we have snow but we can get out.
The roads are slushy but passable. We might have to take our time, but I believe that the slow liane is always better. We see more of the passing scenery.
I remember the fun the kids had in all that snow. Building snow forts so that could have snowball battles. Those mounds of snow took a long time to disappear and left some good and not all bad memories.
Today is my day to cook for the weekend and on the menu is:
15 Minute Garlic Butter Chicken with Paremesan Cauliflower Rice
2 boneless and skinless chicken breasts, halved horizontally to make 4
1/2 cu Paremesan, finely grated
Salt and pepper to taste
2 cloves garlic, minced
1 tsp. paprika
1 tsp. Italian seasoning
4 Tbsp.butter, divided
1 head culiflour, riced
1/2 cup onion, chopped
2 cloves garlic minced
2 Tbsp. vegetable stock
Juice of one lemon plus zest if desired
Red chili pepper flakes, optional
1/4 cup fresh parsley, chopped
For the chicken:
To make this parmesan chicken recipe: In a shallow plate, combine parmesan , garlic, paprika and Italian seasoning. Season breasts with salt and pepper, dredge in the parmesan mixture and set aside
In a large nonstick skillet melt 2 Tbsp of butter over medium high heat. Cook chicken until golden on each side and cooked through
The cauliflower rice:
In same pan melt 2 Tbsp. butter. Fry the garlic and onions for 1 minute until fragrant, be careful not to burn. Add riced cauliflower to the skillet and stir to mix evenly and coat in melted butter. Cook stirring regularly for 1 minute more.
Stir in the 2 Tbsp. vegetable stock , half the parsley, lemon zest if using. Cook cauliflower rice for a minute to reduce the juices.then add the lemon juice and a few sprinkles of leftover parmesan cheese. Adjust seasoning as needed. Stir in the remaining parsley. Return chicken breasts over the cauliflower rice and reheat quickly. Serve your chicken with fresh cracked black pepper, red chili pepper flakes and more parmesan cheese.
Using a non stick pan will keep the parmesan from sticking This makes a delicious one pot meal. Cooking time will depend on the thickniss of your chicken. You could also enrich the sauce by adding some white wine. I had a bag of frozen Cauliflower rice on hand so that is what I used for this recipe.
If you’re not a fan of cauliflower you could use noodles
