Today is National Polka Dot day which celebrates one of most esteemed fashionistas, Minnie Mouse. Minnie is not only Mickey Mouse’s beloved counterpart, but is a sassy and sweet icon who popularized the polka dot pattern.
Celebrate today in your special way. Wear your favorite polka dot outfit or set up a fun craft activity with the kids.

I don’t have much in my wardrobe that has polka dots on it. The only thing I can think of is a Spring coat that is black with white polka dots on it and right now it is far too cold to wear a Spring Coat.
Our high for today will be around 19 degrees and in this cold weather you need a heavy coat to keep warm outside. I’ll have to look to see if I can find a scarf to wear today so I can celebrate!
This is my day to cook for the weekend and on the menu for today is:
Down Home Pork Chops
Makes 4 servings
1 Tbsp. vegetable oil
4 boneless pork loin chops
1 garlic clove, minced
1/2 cup beef broth
2 Tbsps. brown sugar
1 Tbsp. soy sauce
1/4 tsp. crushed red pepper flakes
2 tsp. cornstarch
2 Tbsp. cold water
In a large skillet, heat oil over medium high heat. Add pork chops and brown on each side. Remove and set aside. Add garlic to the pan, cook and stir 1 minute. Stir in broth, brown sugar, soy sauce and red pepper flakes. Return porches to pan, cover and simmer until a thermometer insert in the chop reads 145 degrees. 6 to 8 minutes.
Remove chops and keep warm. Combine cornstarch and water until smooth, stir into the broth mixture. Bring to a boil, cook and stir until thickened. Serve over chops.
I’ll be having these with green beans and some sweet potatoes today and eat leftovers tomorrow,
Today I’m going to stay in. I got my exercise for the week and have gone out walking 3 different times if you include the grocery store. I just want to stay in now and keep warm for the weekend.

Polka Dots are a lot of fun! You mayn't be able to see them on my Sunshine sign, but they are there!
I love polka dots, too -- but just sent a favorite black-and-white dress to Goodwill. There was nothing wrong with it, but way TOO short skirt for a 71-y/o woman. (LOL)
Your pork chop recipe sounds yummy, for sure. Clipping and saving! I've 4 large bone-in chops in the freezer, but I already committed to making another pot of chili tonight. That said, I'd better get to browning the meat. Happy Saturday!
My 5th gr. teacher Mrs. Norton always wore a blue with white polka dots. Not all the time, but enough. It suited her, she was a superb teacher.
I love polka dots and my favorite os a black and white polka dot top I wear every spring with a white skirt. Your winters are amazing. I'd stay in, too, with temps that cold. 56 days until spring! I love that you count them down for us!
