ON THE BRIGHT SIDE
SATURDAY,JANUARY 15TH, 2022
The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is International Hot and Spicy Food Day which celebrates a day to enjoy something hot and spicy. Archeaologistical evidence suggest that people have been using spices in their recipes for over 6000 years.
The hottest chili pepper in the world is the Naga Jolokia. On average one of these peppers is over 170 times spicier than a jalapeño pepper.
Throughout the world there are hundreds of spices that contribute to an array of hot flavored foods. Hot foods can actually be good for you because of the medicinal and antimicrobial properties.
Garlic, chilies, onions, allspice and oregano all kill bacteria and make food safer to consume.
To celebrate today try a few hot peppers or sauces with your food today.
If you can't see the bright side, polish the dull side
Ounce for ounce, herbs and spices have more antioxidants thank any other food group.

When it comes to hot foods, I like mine mild. I don’t use jalapeño peppers in my food. I do use a lot of different spices. And I do use garlic and onions often. So I guess you could say I like spicy foods, but not hot ones.
My favorite spicy food would have to be chilli, but I make mine milder than some. Chili powder is the spice I use in it.
It’s my day to cook for the weekend, but nothing too hot.
On the menu for today is:
Chicken Parmesan Casserole
Makes 6 servings
8 oz. whole wheat rotini
4 Tbsp. olive oil, divided
1 cup chopped onion
1 28 oz can crushed tomatoes
1 tsp. garlic powder
1 tsp dried oregano
1/2 tsp salt
1/4 tsp. crushed red pepper
2 cups shredded cooked chicken
1 cup shredded mozzarella cheese
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
2 Tbsp. chopped parsley
Preheat oven to 400 degrees. Lightly coat an 8 inch square baking dish with cooking spray.
Bring a large pan of water to boil. Add rotini and cook according to package directions. Drain.
Meanwhile heat 2 Tbsp. oil in a skillet over medium heat. Add onion and cook, stirring Until starting to soften. Add tomatoes, garlic powder, basil, oregano, salt and red crushed pepper; bring to a simmer. Cook, stirring until thickened. Stir in chicken and cooked rotini. Transfer to the prepared baking dish and top with mozzarella.
Stir bread crumbs, Parmesan cheese, parsley and remaining 2 Tbsp. oil together in a small bowl. Sprinkle over the casserole. Bake until hot and topping is golden, about 30 minutes.
Serving size is 1 cup. I’ll be having this with a crisp green salad on the side. I be using cooked canned chicken for this recipe as it’s what I have on hand. It works when you don’t have leftover cooked shredded chicken. The meal does have a few spices in it so that’s how I’m honoring today.
We’re are back in the deep freeze here and they say a winter storm may be coming our way here Sunday night into Monday. I can only hope we don’t get much at all. But I have my snow shovel out just incase we do.
I hope you all have a SUPER Saturday!!

may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters
We ask this through Christ our Lord.

ADVICE FOR TODAY
The secret of happiness is variety, but the secret of variety, like the secret of all spices, is knowing when to use it.

A cold cay is a good time to have something hot and spicy!
Your dinner sounds delicious! Stay bundled up and warm with all that cold weather and have a nice relaxing weekend. :)
Ironic! I've got a slow-cooker full of chili brewing right now. Nothing like what you're experiencing, but our weather's supposed to turn cold and nasty tonight. Tom's not as fond of 'spicy' hot as I am, so we compromise a bit -- I add the fresh hot chiles to mine in a separate bowl after the fact.
