ON THE BRIGHT SIDE
SATURDAY,JANUARY 1ST, 2022
The moments our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is New Year’s Day which is the first day of the new year. The tradition of celebrating New Year’s Day began over 4000 years ago in ancient Babylon. During that era, the calendar changed over on the first day of spring. In 153 BC, the Roman Senate changed the date for New Year’s to January 1.
Today, New Year’s Day signifies a time of new beginnings and resolutions . There are many traditions and festivals that take place on New Year’s Day around the world. Traditionally people in California decorate carriages with flowers during the Tournament of Roses Parade in order to celebrate the ripening of the orange crop. In the Netherlands, people eat donuts because they believe it will bring them good fortune.
Making New Year’s resolutions is another popular tradition for the world. Decide what yours will be and share your best wishes for the year ahead. Happy New Year.
If you can't see the bright side, polish the dull side
THOUGHT FOR TODAY
Hope smiles from the threshold of the year to come, Whispering ‘it will be happier’…
Alfred Lord Tennyson
It’s a tradition here at my house to fix pork roast and sauerkraut for New Year’s day. And any of the family that’s available are invited over to dinner. I’m only making a small pork roast today as I know it will be a small gathering. DD has company at her house and DS#5 is recovering from surgery he had done on the veins in his leg. He’s supposed to take it easy for a while.
DS#6 also said they would be staying at home as they just got back home there from celebrating the Christmas holidays.
So it may just be me, but there will be extra for any company I might get.
Insta Pot Pork Roast
Makes 8 servings
1/4 cup packed brown sugar
1/4 cup plus 2 Tbsp. water, divided
1/4 cup balsamic vinegar
1 Tbsp. minced rosemary
3 garlic cloves minced
1 Tbsp. soy sauce
2 lbs. pork tenderloin. halved widthwise
1 Tbsp. olive oil
1 Tbsp cornstarch
In a small bowl, whisk brown sugar, 1/4 cup water, vinegar, rosemary, garlic and soy sauce; set aside. Select saute or browning setting on your insta pot. Adjust for medium heat; add oil. When oil is hot, brown pork. Press cancel. Return all pork and vinegar mixture to the pot.
Lock lid; close pressure release valve. Adjust pressure to high for 20 minutes. Let pressure release naturally. Remove pork to a serving platter. In small bowl whisk cornstarch and remaining 2 Tbsp. water until smooth; stir into pot . Select saute setting and adjust for low heat. Simmer stirring constantly until thickened. Drizzle over pork, If desired sprinkle with additional rosemary.
Rosemary stands for remembrance so appropriate as we begin a new year. My father said it was customary in Hungary to have pork roast and sauerkraut for good luck.
I fix my sauerkraut separately in a pan, frying it with a little brown sugar mixed in. It’s the way my mom always made it and I love it.
I’ll also be having some applesauce and mashed potatoes with the roast.
We are still in the 40’s here and its raining, but tomorrow they say it will be colder again and we’ll have snow.
The pictures today are from January 1, 2019.
I hope you have a SUPER Saturday! Happy New Year !

that with all who love them
they may ever praise you for your loving care.

May luck be yours throughout the coming new year !
Oh gosh, I thought the pictures were from last night! Pork roast and sauerkraut sounds so good to me! The only New Year's traditions I can remember from my nuclear family were to go onto our porch at midnight and bang on pots and pans. I was so tired last night from prepping for our sleet storm today that i fell into bed at ten. I live in the country, but usually hear some gunfire at midnight... last night I heard NOTHING. :-) Happy New Year!
Happy New Year, Ma! Yikes, I totally forgot about the Tournament of Roses parade. We're still working to finish Tom's spiral cut ham, but I like the sound of your IP pork roast. We buy them regularly, but I've never done it in anything except the slow cooker.
